Nana help an Ol' Chef out, my forte' isn't sweets, I might be, but I fail at this, I need a basic FUDGE recipe, include how NOT to make it grainey and why this could happen..I have 2 clients who made fudge on the holidays and asked me WHAT went wrong.. and it went grainey like, I can explain in chemistry, but not that my words to thier minds..it was still very good fudge, but they were sad on the results, and I know you posted this at X-mas...I think I threw them off by saying that they needed a thermometer, if I make and have, it is fine, but I am trained and never really use a thermometer..and I barely make it anyways..HELP ME NANA..plus as Valentines is out there, maybe some pep's need a good reason to enjoy a TREAT...many thanks, Nana..

Buy a jar of Kraft Marshmellow Kreme. The recipe for Fantasy Fudge is on the back. The graininess comes from not melting the sugar slowly. Takes 10-20 minutes. Then bring the sugar, butter, milk to a ROARING boil and stir about constantly for 5 minutes. Take off the burner immediately. Add the chips then the marshmellow. Totally foolproof. You can add any flavor if you want to substitute for the vanilla. Also add nuts, or raisins, or coconut the white chips, or chopped peanuts to peanut butter chips or crushed hard candies. Don't be afraid to experiment. Pour in a lightly buttered cake pan or dump in cupcake holders for individual "candy bars".
Just remember to "simmer" the sugar milk and butter SLOWLY to melt all the sugar.

fool proof fudge
3 cups choclate chips
dash of salt
1 1/2 tsp vanilla
1 can of condensed milk
walnuts if desired
mix choclate chips and condensed milk together put in salt. melt in heavy saucepan over medium heat. then add vanilla. when choclate is melted down if you want add walnuts. line a pan with waxed paper plop that mixture into the lined pan cove with wax paper use a spatula to flatten to thickness you want chill 2 hours take out cut into pieces store lightly covered at room temp.
I put peanut butter in mine i put one whole small jar in when the choclate is melted. Everyone at my work always makes me make this for every occasion.
