    Need to eat cheap?

    I got the idea for this thread from a post in V/W.

    We all have times when money's tight, and we're trying to feed ourselves and our families on next to nothing.

    Let's all list some recipes and other tips for stretching the food dollars. Get creative, and keep it healthy, if ya can!

    I make hamburger go farther by adding all kinds of things. I often cook up a big batch of lentils and store them in the freezer. When I'm making tacos, Hamburger Helper, etc, I replace a lot of the meat with lentils. Most of the time, my family doesn't even notice unless they see me put them in.

    When I make meatloaf, besides the lentils and the usual breadcrumbs, I'll mince up stuff like mushrooms, walnuts, leftover veggies, etc and throw them in. Makes a bigger meatloaf, it's very tasty and healthier, too!

    My best suggestion is to use ground turkey instead of ground beef. It comes in one ound rolls like sausage, here it is about $1 per lb. My family never notices the difference and it has a lot less fat than beef too. I use it in spaghetti, meatloaf, whatever.

    Beans ar an excellent source of lower-fat protein and about 50 cents a bag or so. Even adding ham it is still a pretty cheap dish. Great for when you have leftover ham.
    Some mornings it's not worth the effort of chewing through the restraints.

    Well, what I do first is match coupons to sale items in each store. I usually shop at stores that double and triple coupons.

    I buy a lot of lean ground beef and freeze it when it is on sale. And I also cook a lot of rice (white and brown) to stretch those meals.

    justinenycole.... if you have an aldi's around your area, you can get ground turkey there for about 60 cents a pound....

    I do stuffed meatloaf, soups, grilled sandwiches, ham and potato casserole, turkey/chicken and rice, breakfast for supper, stuffed tomatoes or peppers..

    MK...could you post or pm the ham and potato casserole recipe?? Sounds great!

    I have been know to make "tuna slop" Very cheap and easy!
    box of mac n cheese .25
    can of tuna .50
    can of peas .50
    handful of chips crunched up on top .10
    MMMMMM!!! You can add some velveeta/sliced cheese if you are using generic mac n cheese and need some more cheese flavor for just a few more cents.

    mine is a favorite of all kids and adults and we call it garbage!
    potatoes
    any meat
    oil
    seasonings to taste


    using potatoes and some sorta meat, i use either smoked sausage or polish sausage, mom uses hamburger, sis uses hotdogs, cut up meat, potatoes, add unions if desired, i only put in garlic powder & seasoning salt and a lil oil so it dont stick to bottom of pan, and bake for 1 hr at 350 real easy fast and great.

    My kids have always liked "skillet dinners". I'd take diced potatoes and fry them up, then put stuff over the top like leftover veggies/meat and cheese, or chili.

    I also use leftover baked potatoes. Since they're pre-cooked, I only have to brown them in a little bit of oil or non-stick spray. Makes them a LOT less fatty.

    people think i'm nuts, but those complete box dinners, that come with everything you need for about $3.50, feeds our family and they love them. be glad when walmart comes out with a store brand of them.

    we use lots of he walmart brand hamburger helper, and recently i got hamburger on sale, got like 1 1/2 packages for like 1.25 a pack. bought 16 of them all they had left, then the next week, we found the premade hamburger patties on sale for $1.21 a package, so we bout 12 of them. my kids could eat hamburgers everyday so that works outs.

    but my favorite is just beans and cornbread, lol

    Ok..I can't find the recipie so I'm doing this at the top of my head..so YOU season to taste. LOL

    5 lbs. thinly sliced potatoes, skins removed
    1 large Spanish or Vidalia onion diced or just use frozen
    1 can cream of mushroom soup mixed with 1 can milk *For more sauce use 2, I don't know how you like yours, I use 2*
    grated cheddar cheese
    HAM *I use 2 of those prepacked Hormel ones if I don't have leftover ham*
    butter
    Flour
    Salt
    Pepper
    Garlic

    First off, grease a casserole dish then put 2 tbs of milk and sprinkle flour in the bottom. Put 9 pats of butter on the bottom.

    Layer potatoes, onions, ham, cheese. Sprinkle the top of EACH layer with a little flour, salt, pepper, garlic and 5 more pats of butter. Put a bit of the mushroom soup mixture on top of each layer too. Repeat until all is used. End with the remaining mushroom mixture *should be enough to generously cover the top, Usually I end up using 2 cans since it's so good ). Dot with butter. Bake uncovered at 350 F for 90 minutes or until potatoes are tender. Sprinkle top with remaining cheese and return to oven until cheese on top melts.

    Boy I hope you understood that. LOL If you didn't, let me know and I'll try harder. LOL
