    Mini Peach Cobbler Recipe

    Preheat oven to 350˚F.
    1 cup sugar
    1 cup flour
    2 tsp baking powder
    a dash of salt
    3/4 cup milk
    1 stick of melted butter
    brown sugar
    cinnamon
    1 can diced peaches

    Put 1 tsp of melted butter into each regular size muffin tin.

    Combine the first 5 ingredients by hand… sugar, flour, baking powder, salt and milk.

    Put 2 tbsp of batter into each regular size muffin tin… on top of the melted butter.

    Then put 1 tbsp diced peaches on top of the batter.

    Sprinkle with brown sugar and then cinnamon. I do a pretty generous “sprinkle”.

    Bake the regular size muffin tins for 12 minutes.

    Let them cool almost completely before taking out of pan.

    Don't forget a dollop of vanilla ice cream...YUM!

    Cowboy Cornbread...

    Brown and season 2 lbs of hamburger meat, drain, add two cans of drained Rotel tomatoes and one can of Ranch style beans. Simmer 10 minutes. Mix two packages of Mexican style cornbread per directions, (or two pkgs. of your preferred 8 X 8-inch cornbread mix). Add a can of cream style corn to cornbread mix, toss in shredded cheese of choice and stir. Pour half of your cornbread mix in the bottom of the pan, pour meat mixture, top with more shredded cheese, pour remaining cornbread mix on top. Bake at 350 until cornbread is done. Tah-dah!! Cowboy Cornbread!! Very easy, Very tasty, Very inexpensive!! Enjoy!!


    Carmel Pound Cake

    1 ½ c. butter softened,
    5 eggs
    2 c.brown sugar,
    3 c all/pur. Flour
    1 c. Sugar,
    1 t. baking powder
    ½ t. Salt,
    1 cup milk,
    1 c. Pecans
    1 (8oz)bag toffee chips,
    1 t. Vanilla
    1 Jar Caramel Topping

    Preheat oven to 325 spray a bundt pan w/pam & dust w/flour, Beat butter until creamy. Add sugars beating until fluffy. Add eggs one at a time. In medium bowl combine flour, baking powder & salt. Add flour mix to batter alternately with milk, beat until just combined. Stir in toffee & pecans. Spoon batter into pan and bake 1-1/2 hrs/until wooden pick comes out clean. To prevent excess browning, cover cake with foil while baking. Let cake cool in pan for 10 minutes. Remove from pan, cool on a wire rack. Drizzle Caramel on cake.

    I love sweet potatoes, almost anyway you can fix 'em but this is really a YUMMY & Healthy recipe!!



    Roasted Sweet Potatoes

    3 Sweet potatoes, peeled and cut into bite size cubes
    2 tsp olive oil
    1 tbsp butter
    1 tbsp of brown sugar (organic)
    1 tsp of ground cinnamon
    1/4 tsp of ground nutmeg
    Pinch of ground ginger
    Sea salt, to taste

    Directions:

    Preheat the oven to 350 degrees.
    Coat a small baking dish with cooking spray.
    Peel and dice the sweet potatoes into bite size cubes and place in the baking dish.
    Melt butter in the microwave and pour over the potatoes along with the olive oil, brown sugar, cinnamon, nutmeg, ginger and salt.
    Add more sugar or cinnamon if desired.
    Toss to coat evenly.
    Bake in the oven for 60 minutes
    Stir the sweet potatoes once or twice during roasting.

    ~**Cherry Cream Cheese Bake**~

    1 can cherry pie filling
    8 oz cream cheese, room temperature
    1/2 cup powdered sugar
    1 tube crescent rolls
    1/2 stick of butter
    2 tbsp vanilla
    1/2 cup granulated sugar
    Instructions

    Preheat the oven to 375 degrees.
    Grease an 8 x 8 baking dish.
    Take half of the crescent rolls and lay them out on the bottom of the baking dish.

    In a medium sized mixing bowl, blend cream cheese until smooth.

    Once smooth, add powdered sugar and vanilla and blend.

    Once blended, spoon onto the crescent rolls in baking dish and spread evenly.

    Top with can of cherry pie filling.

    Top with the last half (4 triangles) of the crescent rolls.

    Melt butter and pour on top of crescents.

    Top with granulated sugar and bake for 25 minutes or until browned.


    Almond Joy Cookies
    how can you go wrong with chocolate and coconut?

    Ingredients
    1 cup butter
    1 1/2 cups white sugar
    1 1/2 cups brown sugar
    4 eggs
    3 teaspoons vanilla
    4 1/2 cups flour
    2 teaspoons baking soda
    1 teaspoon salt
    5 cups chocolate chips
    2 cups sweetened coconut
    2 cups chopped almonds
    Directions
    Pre-heat oven to 375°F Lightly grease cookie sheets.
    Combine dry ingredients, set aside.
    In a large bowl, cream the butter and sugars together. Beat in the eggs, one at a time, stir in the vanilla. Stir in the dry ingredients until well mixed then stir in the chocolate chips, coconut and almonds. Drop by rounded tablespoonfuls onto the prepared cookie sheets.
    Bake for 8 to 10 minutes. Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

    Once falls rolls around, I am a little (just a little) Pumpkin Obsessed! So our go to cookie – the Chocolate No Bake Cookie – gets a revamp with pumpkin flavors as well. Using a pumpkin spice pudding mix and pumpkin spice, these little cookies are great for an afterschool snack or bedtime treat for your family!

    No Bake Pumpkin Oatmeal Cookies

    Ingredients:

    •1.5 cups white sugar
    •0.5 cups brown sugar
    •0.75 cups butter
    •0.66 cups milk
    •1 (3.4 oz) box instant pumpkin spice pudding mix (if you can’t find sub vanilla pudding & 1 TBSP pumpkin pie spice)
    •3.5 cups quick cooking oats
    •1 tsp pumpkin pie spice
    •1 tsp vanilla extract

    Directions:

    In a saucepan, combine sugars, butter and milk. Bring to a boil. Boil 2 minutes. Remove from heat and add in the pudding mix, stirring to combine completely. Add in pumpkin pie spice, vanilla and oats. Stir to combine and let stand for 5 minutes. Drop by rounded tablespoonfuls onto waxed paper, and allow to cool completely. Store in airtight container.

    Freezing Directions: Follow directions above. When completely cool, transfer to gallon sized freezer storage bag.

    Chocolate Peanut Butter Bars

    2 cups quick-cooking oats
    1 3/4 cups firmly packed light brown sugar
    1 1/2 cups All Purpose Flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 cup butter
    1/2 cup chopped peanuts
    1 cup (6 oz. pkg.) semi-sweet chocolate chips
    1 large egg, beaten
    1 (14 oz.) can Sweetened Condensed Milk
    1/2 cup Creamy Peanut Butter

    HEAT oven to 350°F. Combine oats, brown sugar, flour, baking powder and baking soda in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles fine crumbs. Stir in peanuts.

    RESERVE 1 1/2 cups crumb mixture. Stir egg into remaining crumb mixture. Press onto bottom of 13 x 9-inch baking pan.

    BAKE 15 minutes.

    STIR together sweetened condensed milk and peanut butter in small bowl until well combined. Pour evenly over partially baked crust.

    STIR together reserved crumb mixture and chocolate chips. Sprinkle evenly over peanut butter layer.

    BAKE an additional 15 minutes. Cool. Cut into bars.

    Chicken Tortilla Crockpot Soup

    1 pound shredded, cooked chicken
    1 (15 ounce) can whole peeled tomatoes, mashed
    1 (10 ounce) can enchilada sauce
    1 medium onion, chopped
    1 (4 ounce) can chopped green chile peppers
    2 cloves garlic, minced
    2 cups water
    1 (14.5 ounce) can chicken broth
    1 teaspoon cumin
    1 teaspoon chili powder
    1 teaspoon salt
    1/4 teaspoon black pepper
    1 bay leaf
    1 (10 ounce) package frozen corn
    1 tablespoon chopped cilantro
    7 corn tortillas
    vegetable oil

    Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.

    Preheat oven to 400 degrees F (200 degrees C).

    Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.





    Holy Cow Cake

    Chocolate Cake Mix (your preference), baked as directed
    1-14 oz. can of sweetened condensed milk
    8 oz. jar of caramel topping
    4-5 Butterfingers candy bars, crushed
    1-8 oz. cream cheese, softened
    12 oz. Cool Whip

    Prepare and bake cake as directed on package.

    Meanwhile, blend caramel and sweetened condensed milk.

    After removing cake from oven, use a skewer or fork to poke holes into the top of the cake.

    Pour caramel mixture over cake.

    Crush candy bars and sprinkle half of them over the warm cake. Chill.

    Stir cream cheese and Cool Whip together until blended well. Spread over cooled cake.

    Sprinkle with remaining candy.

    Avocado Egg in a Basket

    One of the healthiest and yummiest breakfast/snacks ever!! High in protein and healthy fats. SO good for you! And delicious.

    Ingredients:


    Whole avocado
    Eggs
    Cayenne pepper (or any spice of your choice)
    Cheese (optional)

    Remove the pit from an avocado. Scoop out a little more avocado to increase the size of the pit’s crater. Crack an egg into the crater. Sprinkle with Cayenne pepper (cheese too if you desire). Bake in the oven at 180 degrees until egg is cooked to the level you like.

    Oven Baked Fajita

    1 pound boneless, skinless chicken breasts, cut into strips
    2 Tbsp vegetable oil
    2 tsp chili powder
    1 1/2 tsp cumin
    1/2 tsp garlic powder
    1/2 tsp dried oregano
    1/4 tsp seasoned salt
    1 (15 oz) can diced tomatoes with green chilies (Rotel)
    1 medium onion, sliced
    1/2 red bell pepper, cut into strips
    1/2 green bell pepper, cut into strips

    Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt. Drizzle the spice mixture over the chicken and stir to coat. Next add the tomatoes, peppers, and onions to the dish and stir to combine. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.



    Sticky Bun Breakfast Ring:
    WOW these look Awesome and Delicious!!!

    2 small tubes refrigerator buttermilk biscuits OR 1 tube Pillsbury Grands buttermilk biscuits
    3 Tbsp. butter, melted
    1/2 C. pancake syrup (any brand you like, I used Mrs. Buttersworth)
    1/3 C. packed light brown sugar
    1/2 tsp. cinnamon
    1/4 C. chopped pecans, optional
    1/4 C. chopped almonds, optional

    Spray a fluted pan with non-stick spray. Combine the melted butter and syrup in a small bowl and set aside. In another bowl, combine the brown sugar, cinnamon, and nuts (if desired). Place about half of the syrup mixture in the bottom of the pan. Then sprinkle half of the brown sugar mixture on top. Lay the biscuits on the bottom of the pan, overlapping edges (closely together) to form a ring. Top with remaining syrup and sugar mixtures. Bake at 375 degrees for approximately 20-25 minutes or until golden brown. Cool for 1 minute in the pan, then invert onto a serving platter and enjoy!

    ** You can use 1 1/2 tubes of the Pillsbury Grands buttermilk biscuits if 1 doesn't' seem like enough) and bake it for about 30 minutes.

    White Chocolate Peanut Butter Krispies

    2 cups Rice Krispies cereal
    2 cups dry roasted peanuts
    2 cups miniature marshmallows
    1 cup peanut butter
    2 pounds white chocolate chips (2 12-oz packages plus 1 1/3 cup)

    In a large bowl, combine cereal, peanuts and marshmallows. In a microwave-safe bowl, melt chocolate and peanut butter on High for 1 minute and then in 30 second intervals until fully melted. Stir chocolate into cereal mixture. Mixture will be slightly runny. Drop by tablespoons onto waxed paper. Let set until firm, 2 hours. Store in an airtight container.
