    wanted>>>Do a search for "Herman starter." I posted the recipe to make the starter, how to feed it and several recipes to go along with it. It's somewhere here in the recipe thread.

    Butternut squash. I usually just slice it 1/4" thick, peel it, dip in cracker crumbs, beaten egg, back in cracker crumbs, salt & pepper it then fry it in a skillet in a little oil. I would imagine the_fugative or Jolie can come up with some other recipes for you though.

    Perfect timing you two! Chitty day. Two, not one, but two friends of mine died last night. One, 49 years old, from cancer. And another, the husband of a friend, tractor fell over and pinned him under it. I get to go to two wakes tomorrow night. (Didn't you just do that not long ago Jolie?)

    I'll get back to you on the bread - I think you want a sourdough, right? It uses a starter. It takes more than 2 hours though..

    Here's something for the butternut squash though..

    SQUASH ROLL

    3 lg. eggs
    1 c. sugar
    2/3 c. butternut strained squash
    1 tsp. lemon juice
    3/4 c. flour
    1/2 to 1 c. chopped nuts
    1 tsp. baking powder
    2 tsp. cinnamon
    1 tsp. ginger
    1/2 tsp. nutmeg
    1/2 tsp. salt

    Beat eggs at high speed for 5 minutes.
    Beat in sugar, stir in squash and lemon juice.
    Sift dry ingredients and fold in. Line greased
    15 x 10 jelly roll pan or cookie sheet with sides
    with greased wax paper. Spread batter, sprinkle
    with nuts. Bake 10 to 15 minutes at 370 degrees
    until cake springs back when touched. Turn on
    towel covered with powdered sugar (confectioners')
    and roll up. When cool, gently unroll and fill with
    4 tbsp. soft butter 1 c. confectioners' sugar 1/2 tsp.
    vanilla Beat together. Reroll, top with confectioners'
    sugar. Chill and serve.

    BUTTERNUT SQUASH PIE

    1 (10 inch) unbaked pie shell
    2 c. mashed, cooked, butternut squash
    1 (13 oz.) can evaporated milk
    2 eggs, beaten
    1/2 c. brown sugar
    1/2 c. white sugar
    1/2 tsp. ginger
    1/2 tsp. cinnamon
    1 tsp. vanilla
    1/2 tsp. salt

    Mix all the ingredients together and pour
    into the pie shell. Bake at 350 degrees for
    about 60 minutes or until firm in the middle.

    BUTTERNUT APPLE CRISP

    3/4 c. brown sugar, divided
    2 tbsp. lemon juice
    1 tsp. ground cinnamon
    1/2 tsp. salt
    3 to 4 c. peeled, sliced, uncooked
    butternut squash
    1 can apple pie filling
    1/2 c. all-purpose flour
    1/2 c. quick-cooking oats
    6 tbsp. butter or margarine, softened

    Combine 1/2 cup brown sugar, lemon juice, cinnamon,
    salt, squash and pie filling. Spoon into 10 x 6 x 2 inch
    greased dish. Cover and bake at 375 degrees for 30 minutes.
    Combine remaining ingredients until crumbly. Sprinkle over
    squash mixture. Bake uncovered about 45 minutes or until
    squash is tender. Serve warm. 8 servings.

    BAKED SQUASH AND APPLE CASSEROLE

    1 sm. butternut or acorn squash, 2
    lbs. or less
    2 apples, cored, peeled, and sliced
    1/4 c. brown sugar
    1 tbsp. flour
    1/4 tsp. salt
    1/4 tsp. cinnamon
    1/4 tsp. nutmeg

    Pare, seed and cut squash into slices. Layer squash
    and apple slices in 7x11 baking dish. Blend other
    ingredients. Sprinkle over squash and apples. Cover
    and bake 45 minutes. Serves 8. Per serving: 114 calories,
    1 gm fat, 66 mg. sodium.

    SQUASH BAKED WITH RUM

    1 butternut squash
    1/2 c. hot water
    3 tbsp. margarine
    3 tbsp. light brown sugar
    2 tbsp. dark rum

    Wash squash and cut in half. Remove seeds. Place
    cut side down in a shallow baking pan. Add hot water.
    Bake in 350 degree oven 45 minutes. Cool and peel.
    In 9x9 inch baking dish combine cubed or sliced squash,
    melted margarine, sugar and rum. Bake 15 minutes longer.
    Baste once or twice.

    This recipe is really good if you pick out the mushrooms!

    BEEF BURGUNDY

    4 lbs lean beef, cubed
    1 cup red wine
    1/3 cup oil
    1 tsp thyme
    1 tsp black pepper
    8 slices bacon, diced
    2 cloves garlic, crushed
    1 onion, diced
    1 lb mushrooms, sliced
    1/3 cup flour

    Marinate beef in wine, oil, thyme, and pepper four hours at room temperature or overnight in refrigerator. In large pan, cook bacon until soft. Add garlic and onion; saute until soft. Add mushrooms and cook until slightly wilted. Drain beef, reserving liquid. Place beef in slow cooker. Sprinkle flour over the beef, stirring until well
    coated. Add mushroom mixture. Pour reserved marinade over all. Cook on LOW 8-9 hrs.

    Ok, now for the bread.. here's the starter..
    I actually have 29 Herman starter recipes. This was the first one in the list.

    "HERMAN" STARTER

    1 tbsp. dry yeast
    2 tsp. sugar or honey
    1/2 c. warm water
    2 1/2 c. white flour
    2 c. warm water

    Mix together the yeast and 1/2 cup warm water
    until yeast is dissolved. Add rest of ingredients
    in large crock or glass jar. DO NOT USE A METAL CONTAINER.
    Cover with a damp cloth and rubber band and keep at room
    temperature for 5 days. Now "Herman" can be refrigerated stirring daily.

    1 c. milk
    1 c. flour
    1/2 c. sugar

    Put in large covered bowl or he'll bubble all
    over the refrigerator. Bake "Herman" on the
    10th day using 2 cups of mixture. Save 1 cup
    for next time and give 1 cup to a friend.

    "HERMAN" WHITE BREAD

    Preheat oven at 400 degrees.

    1 env. active dry yeast
    1 1/2 c. warm water (105 to 115
    degrees)
    1 c. "Herman" starter
    1 1/2 tsp. salt
    2 tsp. sugar
    About 6 c. flour, divided
    1/2 tsp. baking soda

    In large bowl, dissolve yeast in the warm water.
    Add starter, salt, sugar, and 2 1/2 cups flour.
    With electric mixer on medium speed, beat 5 minutes.
    Cover, let rise in warm, draft free place about 2 1/2
    hours or until bubbly. Combine 2 1/2 cups flour and the
    baking soda. Stir into yeast mixture. With hands, work in
    enough additional flour (1/4 cup at a time) to make a stiff
    dough. On lightly floured surface knead dough 5-7 minutes
    or until smooth. Divide in half. Cover with towel and let
    rest for 10 minutes. Shape into two 7 inch round loaves.
    Place each on a lightly greased heavy cookie sheet. With
    sharp knife, make diagonal slashes across tops. Cover. Let
    rise in warm, draft free place about 1 hour or until doubled.
    Bake in preheated oven, 400 degrees, about 35 minutes or until browned and loaves sound hollow when tapped on bottom.
    Makes 2 loaves.

    SOURDOUGH CINNAMON BREAD MADE FROM HERMAN STARTER

    2/3 c. oil
    2 c. flour
    1 c. sugar
    3 eggs
    1 1/2 tsp. baking powder
    1 1/2 tsp. cinnamon
    1/2 tsp. soda
    1/2 tsp. salt
    1 c. chopped nuts
    1 c. Herman Starter

    Mix all ingredients well and pour into 2 well
    greased loaf pans. Bake at 350 degrees for 50 to
    55 minutes, checking at 45 minutes. I have added
    one cup grated apple to this recipe, which is also good.

    HERMAN CINNAMON ROLLS

    2 c. Herman starter
    2 c. flour
    1/2 tsp. soda
    1/2 tsp. salt
    4 tsp. baking powder
    1/2 c. oil

    Mix and knead. Roll out dough 1/4 inch thick and
    spread with soft oleo or butter. Sprinkle with cinnamon
    and sugar. Roll up as for jelly roll, slice into 1/2 inch
    pieces. Combine 1 stick oleo, 1 cup brown sugar, 1/2 cup
    nuts. Melt oleo. Spread in bottom of 9x13x2 inch pan.
    Place slices of dough on top and bake at 350 degrees for
    30 minutes. Invert and remove pan.

    "HERMAN" WHOLE - WHEAT BREAD

    1 envelope active dry yeast
    1 1/2 c. warm water (105 to 115
    degrees)
    3 1/4 c. whole wheat flour
    1 c. "Herman" starter
    3 tbsp. each molasses and butter or
    margarine, softened
    1 1/2 tsp. salt
    About 2 1/2 c. all-purpose flour,
    divided
    1/2 tsp. baking soda

    In large bowl, dissolve yeast in the warm water.
    Stir in whole wheat flour, starter, molasses, butter,
    and salt. Combine 1 cup of the all-purpose flour with
    the baking soda. Stir into yeast mixture. Stir in
    remaining all-purpose flour, 1/4 cup at a time until
    a stiff dough forms and leaves sides of bowl. On lightly
    floured surface, knead dough 5 to 7 minutes or until smooth.
    Shape in ball; place in greased bowl; turn to grease top.
    Cover; let rise in warm draft- free place about 1 to 1 1/2
    hours or until doubled. Punch down; divide dough in half.
    Shape in 2 loaves; place each in a greased 9 x 5 x 3 inch
    loaf pan. Cover; let rise in warm draft-free place about 1
    hour or until doubled. Bake in preheated 375 degree oven
    about 35 minutes or until browned and loaves sound hollow
    when tapped on bottom. Remove from pans to rack to cool.
    Makes 2 loaves, 18 slices each.

    HERMAN AMISH FRIENDSHIP CAKE

    1 c. Herman starter
    2/3 c. oil
    2 c. flour
    2 tsp. soda
    3 eggs
    1 c. sugar
    1/2 tsp. salt

    Mix well. --STRUDEL MIX:--

    2 tsp. cinnamon
    1/2 c. brown sugar
    1/2 c. nuts
    1/3 c. melted butter
    1/2 c. sugar
    1/2 c. oatmeal

    Put 1/2 batter in greased and floured 9 x 13 inch pan.
    Sprinkle 1/2 strudel over top. Then add rest of batter.
    Again sprinkle with strudel. Bake at 350 degrees for
    35-40 minutes.

    "HERMAN" APPLESAUCE CAKE

    Oven at 350 degrees.
    This will make a 9 x 13 inch cake, or a frosted
    layer cake.

    1/2 c. shortening
    2 c. sugar
    2 eggs
    1 1/2 c. "Herman" starter
    1 1/2 c. applesauce
    1 tsp. cinnamon
    1/2 tsp. cloves
    1/2 tsp. allspice
    1 1/2 tsp. salt
    1 1/2 tsp. baking soda
    2 tbsp. sugar
    2 c. flour
    1 c. raisins
    1/2 c. chopped nuts

    Cream together shortening and sugar. Beat in eggs.
    Stir in "Herman", applesauce and spices. In small bowl,
    blend salt and baking soda and sugar. Sprinkle over
    batter and stir gently. Add flour and stir until smooth.
    Add raisins and nuts and stir well. Pour into cake pans
    (or 9 x 13 inch pan) which have been greased and lightly
    floured. Bake at 350 degrees for 25-30 minutes (about 45-50
    minutes for 9 x 13 inch pan) until toothpick comes out clean.
    Cool and frost.

    ICING:
    1 c. soft butter
    Approximately 2 c. powdered sugar
    1 egg yolk, soft boiled if desired
    Maple flavoring
    1/2 c. whipping cream
    1 tsp. sugar

    Mix butter and powdered sugar with egg yolk. Add maple
    flavoring to taste and a little brown food coloring if
    desired. Whip cream and sweeten with teaspoon of sugar
    and fold into maple flavoring. Or use a cream cheese icing.

    -----------------------------------------------------------------

    "HERMAN" CHOCOLATE COOKIES

    2 c. brown sugar
    4 eggs
    2 tsp. vanilla
    4 tbsp. cocoa
    1 tsp. baking powder
    1 c. shortening
    1 c. "Herman" starter
    3 c. flour
    1 tsp. soda
    1/4 tsp. salt
    Chopped nuts are optional

    Combine all ingredients in usual manner until well
    blended. Drop by teaspoon onto greased cookie sheet.
    Bake at 350 degrees for about 10 minutes.

    Note: You may frost with chocolate icing.
