Martha's Way vs. the Real Women's Way
Martha's Way: Use Tupperware lids under your couch legs to easily slide it out for regular vacuuming.
The Real Women's Way: Kick all the toys underneath so that no one can see the actual dirt.

CHOCOLATE ICEBOX PIE
2 1/2 cups milk, divided
1 1/3 cups sugar
1/4 cup unsweetened cocoa powder
1 tablespoon butter or margarine
7 tablespoons cornstarch
6 tablespoons water
3 extra-large egg yolks
1 teaspoon vanilla
1 cup miniature marshmallows
1 baked 6-inch pie shell
Sweetened whipped cream
Chocolate curls or shavings
Combine 2 cups milk, sugar, cocoa and butter in a medium-size saucepan. Bring
just to a boil over medium heat. In a medium-size bowl, completely dissolve
cornstarch in water. Stir in remaining 1/2 cup milk. Whisk in egg yolks and
vanilla until well-blended. Gradually add egg yolk mixture to mixture in
saucepan, stirring constantly with wire whisk. Cook, stirring constantly, about
2 minutes, or until mixture is thickened and smooth. Add marshmallows and stir
until they melt and mixture is smooth. Pour into pie shell. Press plastic wrap
directly on
filling. Refrigerate at least 2 hours. Remove plastic wrap. Top with whipped
cream and garnish with chocolate curls. Notes: Pressing plastic wrap directly
onto hot pie filling prevents a tough, dry "skin" from forming as pie cools. Use
a potato peeler to make decorative chocolate curls or shavings from a chocolate
candy bar.

1/2 cup margarine
1 cup flour, sifted
1 cup pecans, chopped
8 oz cream cheese
1 cup confectioners' sugar, sifted
8 oz Cool Whip
1 chocolate instant pudding
1 vanilla instant pudding
3 cup milk
Mix ingredients, spread in 9x13 inch pan and bake 20 minutes in
350 degree oven and cool. Spray or grease pan. Mix and spread over
flour mixture. Mix and spread over other layers. Spread rest of
Cool Whip on top. Sprinkle cake decorations on top, if desired.

Baked Custard
4 cups whole milk
4 eggs, beaten
1/2 cup sugar
2 tsp. vanilla
1/4 tsp. salt
Nutmeg for garnish
Butter melted or nonstick cooking spray to grease custard cups
Heat milk until scalded but not boiling; gradually add eggs, sugar,
vanilla and salt. Stir mixture until sugar is melted. Pour into
greased custard cups or ramekins and sprinkle with nutmeg. Place cups
in a pan half filled with water and bake at 300 degrees for 30 minutes.

Mediterranean Eggplant Casserole
2 tsp. olive oil
1 onion, halved and sliced
3 cloves garlic, minced
1 tsp. oregano, dried
1 1/2 tsp. salt
1/2 tsp. pepper
1 1/2 lbs. tomatoes, chopped
3 tbs. fresh basil, sliced
1 cup dry bread crumbs, seasoned
1/4 cup grated parmesan cheese, divided
3 egg whites, lightly beaten
1 cup mozzarella cheese, shredded
2 lg. or 2 1/2 lbs. eggplant, peeled and cut crosswise into 3/8" thick slices
Prepare a cookie sheet with fat free cooking spray and set aside. Mix
breadcrumbs with 2 tablespoons of parmesan cheese. Beat egg whites
with 1/2 tsp. salt. Dip eggplant slices in egg whites, coat with
seasoned breadcrumbs. Place eggplant slices on prepared cookie sheet.
You will have 2 different batches. Spray eggplant slices with cooking
spray. Set aside. In nonstick skillet heat oil over medium heat, add
onion and garlic. Cook until softened. Add oregano, 1 tsp. salt, and
pepper. Cook for one minute. Add tomatoes, increase heat to high, and
cook until thickened, about 10-12 minutes. Remove from heat and add
basil. Broil eggplant slices, 1 batch at a time for 3-5 minutes per
side, until brown. Preheat oven to 425 F. Layer eggplant slices in a
1 1/2 quart baking dish. Top with tomato mixture and sprinkle with
mozzarella cheese and remaining Parmesan cheese. Bake uncovered
until cheese is bubbly, 10-15 minutes.

Beachcomber Banana Nut Cake
1 cup mashed bananas (about 3 small bananas)
1/2 cup sour cream
2-1/4 cups cake flour, sifted
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon nutmeg
1-1/2 teaspoons cinnamon
1 cup pecans, chopped
1/2 cup unsalted butter
1 cup sugar
1/2 cup light brown sugar, lightly packed
2 large eggs
1-1/4 teaspoons vanilla extract
Powdered sugar (optional)
Preheat oven to 350 degrees. Butter and flour a 9x13-inch pan. Mash bananas well and stir in sour cream. Sift together flour, baking soda, salt, nutmeg and cinnamon. Stir in the chopped nuts and set aside. Cream butter for 1-1/2 to 2 minutes. Add the sugars, blending well. Add the eggs one at a time. Stir in vanilla. Add the flour mixture alternately with the banana mixture. Mix well. Spoon batter into the prepared pan and smooth surface. Bake for 40-45 minutes or until cake is golden brown on top and comes away from sides of pan. Cool completely on cake rack. Just before serving, dust top with powdered sugar, if desired.
SERVES: 8

Fluffernutter sandwich
Ingredients:
2 slices white bread
Peanut butter (smooth or chunky)
Marshmallow crème (let sit at room temperature if it's been in the refrigerator)
-- Spread peanut butter on one slice of bread
-- Spread marshmallow crème on the other slice of bread
-- Place covered sides together and eat!
PB&Gs
One of Rita's favorite recipes that she can make herself (and she doesn't have very many) are PB&Gs, kind of like peanut butter and jelly, but without the jelly and without regular bread.
You need:
Graham crackers (that's the G in the recipe name)
Peanut butter (crunchy or smooth)
Banana (optional)
Rita takes a graham cracker (she likes the cinnamon-flavored ones) and breaks it in half. Then she spreads peanut butter on one side and puts the other cracker half on top. Sometimes she adds in sliced banana. Voila – the simplest sandwich ever.
Trail Mix
You don't have to settle for prepackaged trail mix from stores or vending machines. You can make your own - it will be fresher, and you can add the things that you like and leave out the ones you don't.
Ingredients:
(use equal amounts of each ingredient. For three-four servings, use a ½ cup of each).
M&Ms (or chocolate chips)
Raisins
Dried banana chips
Cheerios
Peanuts (or sunflower seeds)
Mix well in a large bowl and store individual servings in zip-lock bags.
Chocolate Nutters
1/3 cup unsweetened cocoa powder
2 cups sugar
1/4 cup butter
1/2 cup milk
1/2 cup peanut butter
4 cups quick-cooking oatmeal
1 teaspoon vanilla extract
-- Mix cocoa, sugar, butter, and milk in a large saucepan.
-- Cook over medium heat, stirring constantly.
-- Bring to a boil, and boil for one minute, still stirring.
-- Remove from heat and stir in the peanut butter, oatmeal and vanilla.
-- When well mixed, drop from spoon onto wax paper.
-- When cool and "set," store in an airtight container in cool place (your refrigerator's the best place).
Makes 3-4 dozen cookies

UPSIDE-DOWN TACOS
6 lb. ground beef
4 lg. onions, chopped
6 (15 oz.) cans chili beans
6 (10 oz.) cans enchilada sauce
Salt to taste
5 heads lettuce, coarsely chopped
1 (8 oz.) bottle commercial Italian salad dressing
6 bunches green onions, chopped
10 fresh tomatoes, chopped
2 lbs. shredded cheddar cheese
3 (7 oz.) pkgs. corn chips, crumbled
Select a covered roasting pan with tight
fitting cover. Place meat in pan and cook,
stirring, until it loses its redness. Add
onions and cook. Add beans and enchilada
sauce, rinsing each can with water and adding
a little of the water to the pan. Bring to
boil and add salt, about 2 teaspoons or more,
to the taste. Cover roasting pan and simmer
for about 1 or 2 hours. To assemble this dish,
place lettuce in a large salad bowl and toss
with dressing to coat each bite. Then place
onions, tomatoes, cheese and chips on top.
Enjoy! You can also let guests fix their own dish.

PUMPKIN PRESERVES
Cut pumpkin in little squares. Put 1 layer
pumpkin in bowl. Sprinkle with white sugar.
Add another layer pumpkin, sprinkle with sugar.
Slice lemons thin on each layer of pumpkin. Let
set in bowl all night. Will form juice. Add 1
tablespoon ginger. Put into pan. Cook until
tender. Put into jars and process 15 minutes.

MICROWAVE APPLE JAM
2 med. apples
1 1/2 c. sugar
1 tsp. lemon juice
Combine apples and sugar in medium bowl. Microwave
3 to 5 minutes until tender. Beat softened apple
with mixer to blend. Microwave 3 to 4 minutes to
slightly thicken, stirring once. Stir in lemon
juice. Pour into small jar and refrigerate.
Makes 1 1/2 cups.

SLOW-COOKER APPLE BUTTER
Apple slices
1/2 c. water
2 to 3 c. sugar (or to taste)
1/2 c. cider vinegar
1/2 tsp. ground cloves
2 tsp. cinnamon
1/2 tsp. allspice
Fill 4 to 5 quart slow cooker with pared, cored,
sliced apples. Add water. Cook on low until apples
are tender. If you wish you can put this on at
bedtime and cook all night. Next morning, pour
off all liquid. Puree cooked apples in blender.
Return to slow cooker. Add sugar, spices and vinegar.
Cook for 3 hours or until spreading consistency.
Makes 2 to 3 pints.
