    Waikiki Meatballs



    2 pounds hamburger or ground pork

    2/3 cup cracker crumbs

    1/2 cup chopped onion

    1 egg

    1/4 teaspoon ginger

    1/4 cup milk

    Sauce:

    1/2 cup brown sugar

    2 tablespoons cornstarch

    1 (20-ounce) can crushed pineapple, drained, reserve pineapple

    1/3 cup vinegar

    1 tablespoon soy sauce

    Mix together ingredients for meat. Form into balls and brown in saucepan. In separate saucepan, stir sauce ingredients together until smooth; boil for 1 minute. Sprinkle crushed pineapple over meatballs and pour sauce over. Simmer until warm, or keep in crockpot





    Congealed Orange Jello Salad


    2 (3-ounce) boxes orange gelatin

    2 cups boiling water

    2 (11-ounce) cans mandarin oranges, drained

    1 (6-ounce) can frozen orange juice

    1 (8-ounce) can crushed pineapple, undrained

    Topping:

    1 (3-ounce) box lemon instant pudding

    1 cup milk

    1 envelope Dream Whip or 1 small carton Cool Whip


    Combine ingredients thoroughly and pour into a 9x13-inch pan. Chill until set.

    Topping: Mix pudding with 1 cup milk. Mix Dream Whip according to directions. Combine pudding and Dream Whip and spread on salad.



    Wild Rice Stuffed Tomatoes with Basil


    4 large ripe tomatoes

    1 1/2 cups cooked and cooled wild rice

    3 tablespoons chopped fresh basil

    3 scallions, finely chopped with some of the green tops

    2 tablespoons olive oil

    3/4 teaspoon garlic salt


    Cut a 1-inch slice off the top of each tomato. Scoop out the inside pulp, being careful not to bruise the tomato shell. Chop the tomato pulp and drain excess liquid. Combine pulp with the wild rice, basil, scallions, olive oil and garlic salt. Toss lightly. Fill tomato cases with the rice mixture. Serve on a bed of lettuce leaves. May also be served as a hot vegetable. One-third cup of uncooked rice will equal about 1 1/2 cups of cooked rice

    Cucumber Soup



    1 cucumber
    1 clove garlic
    1 quart buttermilk
    1 knife tip ground cumin
    1 Tablespoon fresh dill, chopped
    Salt and pepper to taste
    Dark bread
    Peel and seed cucumber. Cut slices in finger-thick chunks. Put in blender with other ingredients except dark bread. Blend. Refrigerate at least 1/2 hour before serving. Cut dark bread into cubes. Toast to croutons in a thick pan. Blend soup again before serving. Add croutons when serving.

    Russian cuisine


    Oysters with caviar



    2 teaspoons butter (unsalted)
    6 pastry shells
    About 10-12 ounces of beluga caviar
    6 raw oysters, shucked
    Freshly ground pepper to taste
    Freshly squeezed lemon to taste
    French bread, sliced thinly (and toasted lightly if you prefer)

    Lightly butter the pastry shells and fill with caviar. Make a hollow in the center of each and place an oyster inside. Sprinkle oyster with pepper and a bit of lemon juice. Serve immediately with chilled champagne and the French bread with butter on the side.




    Vinaigrette with greens


    3 ea boiled potatoes
    2 ea boiled carrots
    2 ea boiled beets
    2 ea pickles
    1 bunch of spring onions
    12 ea sorrel leaves
    4 tb oil
    salt
    pepper

    Combined cubed vegetables with chopped green onion and sorrel, salt to taste and dress with oil.




    Apple vareniki


    2 ea Apples, peeled.
    1 ts Cinnamon powder.
    1 ts Lemon juice fresh.
    2 tb Butter.
    4 c Flour.
    1/2 c Milk, warm.
    1 Egg.
    1 Egg Yolk.
    2 tb Sour cream.
    1/2 ts Salt.
    1 ts Butter.

    Mix ingredients and knead into a soft and pliable dough. Cover and let sit for 10 minutes in a warm bowl. Knead for 15-20 minutes at most. Divide the dough in 1/2. Roll thin. Cut into 2-inch squares or use the rim of a large round glass. Take one piece and stretch slightly, place a small spoonfull of filling in the center, fold dough over and very carefully seal the edges. Wetting the edge very slightly insures a good seal. In the pot of salted boiling water and cook until they float, gently remove from pot with a slotted spoon.




    Blinchiki with tvorog


    1 c flour.
    1 c milk.
    3 ea eggs.
    salt.
    oil to fry.
    Filling:.
    200 g tvorog (cottage cheese).
    1/2 c milk.
    100 g poppy seeds.
    1 c raisins.
    sugar.

    Put ground poppy seeds and raisins in hot milk and heat until dense, add sugar and cool down. Combine the mixture with tvorog and 2 yolks. Sift flour in a bowl, add milk and salt. Stir in 1 whole egg and 2 whites and knead dough. Bake thin pancakes, but fry only on one side. Put a pancake fried side on a plate, spread the filling and roll into a log. Put all the rolls on a baking sheet, brush with butter and bake in the oven. Serve with milk or juice



    Strawberry with cream

    2 kg strawberry
    7 ea yolks
    500 g sugar
    1 1/2 l milk
    2 tb starch
    vanilla
    waffles

    Whip yolks with sugar, add vanilla, starch and pour in hot milk, stirring constantly in order to have no lumps. As soon as cream gets dense, pour it over strawberries arranged in the molds. Stink in a waffle before serving
