    "Jiffy" Joes

    1 pkg corn muffin mix
    1 lb hamburger
    1 (16 oz) can or jar sloppy joe sauce
    8 oz sharp cheddar cheese
    1 egg
    1/3 cup milk

    1. Preheat oven to 350. Grease an 8 x 8 pan.
    2. In a large skillet, over medium heat, brown hamburger, drain and add sloppy joe sauce and cook for 5 minutes.
    3. Prepare muffin mix per package directions. Pour half of batter into prepared pan.
    4. Top with hamburger mixture, sprinkle with 1 cup of cheese. Top with remaining muffin mixture, sprinkle with remaining cheese.
    5. Bake for 35-40 minutes. Serve warm.

    We make this every once in awhile for my kids and they LOVE it! We have to double thr recipe though. Enjoy!

    I make hamburger gravy with bottled or packaged gravy and serve it over mashed potatoes. I also have a recipe for a mexican bake, with cornbread and corn and black olives that is really good.. can't find it right now though! lol

    Husband's Delight Casserole
    -1 lb lean ground beef
    -2 cloves garlic, finely chopped
    -1 tsp sugar
    -1 tsp salt
    -1/4 tsp pepper
    -2 cans (8 oz each) tomato sauce
    -4 cups dry egg noodles (1/2 lb)
    -5 scallions, chopped
    -1 pkg (3 oz) cream cheese, at room temperature
    -1 container (8 oz) sour cream
    -1/2 cup shredded cheddar cheese

    -In large skillet, cook beef over medium-high heat, breaking up clumps with wooden spoon, until bronwed, 5 minutes.
    -Carefully drain off drippings.
    -Stir garlic, sugar, salt, pepper and tomato sauce into meat.
    -Cover; simmer 15 minutes.

    -Meanwhile, in large, deep pot of lightly salted water, cook noodles just until al dente, firm yet tender, following package directions.
    -Drain.

    -In small bowl, stir together scallions, cream cheese and sour cream until well blended.

    -Lightly coat bottom of shallow 2 1/2 quart baking dish with nonstick cooking spray.
    -Arrange noodles over bottom of dish.
    -Spoon meat sauce evenly over noodles.
    -Carefully spread sour-cream mixture over top.
    -Sprinkle with cheddar cheese. (Can be made up to 24 hours ahead and refrigerated, covered.)

    -Preheat oven to 350 degrees.
    -Bake casserole until heated through and bubbly, about 30 minutes.
    -Let stand 10 minutes before serving.

    **Makes 8 servings

    This is my favorite when I need something quick:

    Salisbury steak with mushroom gravy

    2 lb. ground beef
    1 egg
    1/4 cup dry bread crumbs
    1 small onion
    Salt and pepper to taste
    1 (10 oz.) can cream of mushroom soup
    1 soup can milk
    1 pkg. brown gravy mix

    Combine meat, egg, crubs, onion, salt and pepper. Shape into 6 or 8 oval patties. Brown well on both sides. In a small bowl, combine soup, gravy mix and milk. Pour over patties. Bake at 300* for one hour, or until well done.

    Shortcut Beef Stroganoff-Another favorite

    1 lb. boneless beef sirloin steak, 3/4" thick (can also use ground beef)
    1 T. vegetable oil
    1 can (10 3/4 oz.)cream of mushroom soup
    1 (10 1/2 oz.) condensed beef broth
    1 C. water
    2 tsp. Worcestershire sauce
    3 C. uncooked rotini pasta
    1/2 c. sour cream

    Slice beef into very thin strips. In medium skillet over medium-high heat, heat oil. Add beef and cook until beef is browned and juices evaporate, stirring often. Add soup, broth, water and Worchestershire. Heat to a boil. Stir in pasta. Reduce heat to medium. Cook 15 minutes, or until pasta is done, stirring often. Stir in sour cream and heat through.

    My husband and I enjoy having this for dinner every now and then. We always make two and it's delicious.

    Impossible Cheeseburger Pie

    1 lb Ground Beef
    1 cup Onion, Chopped
    1/2 tsp Salt
    1 cup Shredded Cheddar Cheese
    1 cup Milk
    1/2 cup Bisquick Baking Mix
    2 Eggs

    Preheat oven to 400°F

    Cook onion & ground beef; drain. Stir in salt. Spread into a greased 9" pie plate. Sprinkle with cheese.

    Stir remaining ingredients in a bowl until blended. Pour over ground beef mixture.

    Bake for 25 minutes or until inserted knife comes out clean.

    No where near what the others posted but its quick, easy and cheap. lol

    Just brown hamb and drain and add barbq to it. Done. lol Make mac and cheese and green beans with it.

    lb. Hamburger
    1/2 cup Onion, chopped
    2 cloves Garlic, minced
    2 cups Coleslaw mix (cheaper to just chop up cabbage)
    1 pkg. Frozen corn (10 oz.)
    1 pkg. Frozen green beans (9 oz.)
    4 cups Vegetable juice (like V8, I use the spicy hot)
    1 can Italian style stewed tomato's (14 oz.)
    1 Tbl. Worchestershirt sauce
    1 tsp. Basil, crushed
    Salt 'n pepper to taste

    Brown hamburger, onion & garlic, drain off fat. Pour into crockpot. Add
    remaining ingredients. Cook on low for 8-10 hours or on high for 4-5
    hours.

    Good for cold and/or busy days.
    How do you tell a man is well-hung? You can barely slip your finger between his neck & the noose.
