Christmas/Hanukkah/Kwanzaa Dinner Help Please!

Hi All!

I really need some help. This year I am hosting a Christmas/Hanukkah/Kwanzaa Dinner for 20-30 people. I am looking for any tried and true dishes I can start preparing now and freeze. We'll have Turkey, Ham, Potatoes, all the normal stuff but I'll definitely need appetizers, little finger foods and such. I'm hoping you could share any ethnic recipes passed down thru your family too since I want to do something a little bit more interesting than a traditional meal. I don't really know what will freeze well and would appreciate any advice you cooking gurus might have.
