Wish I had some pointers. Do you have a local food pantry or church group that can offer assistance? Also sent you a PM.

Rice and pasta were always used to stretch the food dollar when I was growing up. A pot of beans with a little meat can be filling and tasty, and are vegetable protein.

I vaguely remember a dish we called Chili Mac - it was made with elbow macaroni, or sometimes, those little shell pasta. Cook and drain the pasta; brown about a pound of ground beef and diced onions, and season with chili powder (other seasoning you can include: cumin, oregano, paprika, garlic powder - not a lot of those, but it can pick up the flavor). Add a can or two of diced tomatoes to the meat, juice and all, and and then mix with the pasta. Let it sit with a lid on the pot for a few minutes so the pasta can pick up the flavor in the liquid. I don't have any measured amounts for this recipe, unfortunately, but I remember it being filling and flavorful.

I've also heard it referred to as goulash, without the chili powder, but maybe with more paprika? At any rate, ground beef and pasta can help stretch the food dollar.

Oh - and fake beef stroganoff - using ground beef and cream of mushroom soup, served over egg noodles. I have also eaten that mix over rice.

I've been there -- now I give to local food banks in order to pay back. And I take every freebie I can get and donate what I don't use. Sign up at your local food bank, it's a good place to start.

As stupid as this may sound, here's a penny pinching website. Even if you're already doing some of these things, try one or two more. You can always try as many as are reasonably possible for your situation. It takes work to save money -- shopping at many stores rather than just going to one place takes time, etc. Hopefully you will not have to do this for long. Good luck.

The villages in FL is a really huge retirement area, right? I think I've heard of it, it's like 3 small towns or something.
