    What's for supper tonight!

    OMG does my home smell wonderful! I have a huge pot of Jolie's red beans & rice cooking & I can't wait until the hubby comes home tonight so I can dig into it!!!!

    I wish I had a place to pick up a loaf of French bread to go with it.

    Either chicken noodle soup or chicken and dumplings. The chicken is cooking now. I have either a sinus infection brewing or a cold starting up, it is all in the sinus area whatever is going on.

    Oh no, I hope you get better quickly. I feel a lot better today. I even went to the gym for a good workout.

    My red beans & rice came out remarkably well. That recipe is definitely going in my box. It was just a little bit too liquidy but I will fix that next time.

    Can you believe I never had chicken & dumplins? They just never appealed to me for some reason.

    Thank you, glad your feeling better. Glad your beans and rice came out.

    You know your the second person I've come across lately that has never had chicken and dumplins. I know as a kid I didn't like them, but that could be how they made them. They threw in whole pieces of chicken and would take a can of biscuits cut each biscuit in quarters and cook them. It wasn't until I became an adult and decided to try to make my own that I started eating them. I use boneless chicken and cook it till done, then once it is cooled I cut it up into small pieces and cook some more. I make homemade dumplings and they come out pretty good.

    I'd love to learn how to make homemade biscuits.

    Tonight's menu:

    jalapeno roasted chicken (recipe came from Mexican made easy with broccoli & some kind of pasta packets that my husband wants.

    I have to work the next 2 evening so I will be doing leftovers.

    My homemade biscuits come out like hockey pucks.LOL
    One of these days I'll get it right.

    I made homemade tomato soup and sandwiches.

    I had pancakes at IHOP tonight. They are my favorite pancakes.

    Pancakes for dinner, I haven't done that in a long time....especially @ IHOP!

    Seperate a small amount of the beans when they are cooked tender... let them cool them squish 'em and throw them back in ... makes it creamy...
