    potato candy

    1/4 cup hot mashed potatoes
    1 tspn melted butter
    1 3/4 cup powdered sugar
    1 1/2 cup flaked coconut
    dash of salt
    1/4 tspn grated lemon or orange rind
    1/2 tspn vanilla

    combine potatoes & butter in med. bowl, gradually add sugar, beating till blended, add remaining ingredients mix well, drop by tspn. full onto waxed paper, let stand until firm

    My potato candy is different.

    Potato candy

    1 medium potato boiled and peeled
    Mash potato and add powdered sugar until stiff
    Spread on wax paper and roll out to about 1/2 inch thick
    Spread peanut butter on this
    Roll , then slice.

    I'm going to make banana bread tomorrow but there is no one to eat all those goodies. I remember Mom used to bake a lot but there were many more to eat it then.

    I've just baked a lot of cookies. I've baked peanut butter, chocolate chip, sugar cookie cutouts, log sugar cookies, shortbread with kisses. I still have a few more types to bake.

    Today..more Cranberry bark, boy that stuff is popular!! And I am making Lemon Blossom Thumbprint cookies with lemon curd filling. oh and some fudge!!!

    This is the easiest recipe I have found. I have made it before and , wow, it took some time. I use to use the small plastic molds but, it was APITA lol


    HARD TACK CANDY

    1 1/2 c. sugar
    1/3 c. Karo
    1/3 c. hot water
    1/2 tbsp. vinegar
    1/2 tsp. flavoring oil
    Food color

    Place ingredients in pan. Cook until 300 degrees on candy thermometer. Add 1/2 tsp. flavoring oil and food color at 275 degrees. Pour onto cookie sheet that has been dusted with powdered sugar. Let cool. Break with knife into small pieces.


    I always keep the mint, spearmint, cinnamon etc seperate because those flavors for some reason take over the fruit ones. I keep mine in an airtight container.

    Same here, I barely have time to finish shopping. I'll be up until about 4am Christmas Eve wrapping.....

    When I was a kid, I used to bake with my aunt. We made a lot of European cookies and cakes. All those recipes are lost/gone now....
