Dont know if this helps, but I saw Jello Pumpkin pudding at Walmart the other day. I am sure it strictly seasonal if you want to give it a try.

When my son in law worked in a bakery, they used pumpkin when making sweet potato pies when they ran out of sweet potatoes.
