Green Beans
Of all things, I cannot cook green beans. Mine always turn out tough and chewy. Does anybody know how to cook "fresh" green beans to make them crisp and crunchy? Do you pan saute them? microwave? steam??? I have no clue, but I am tired of throwing away green beans. I know it's got to be the length of time I am cooking them.

I guess I am correct in assuming you don't want my southern style recipe where I cook them all day. I can't help with the crisp green bean. Good luck.

I'd love your southern style green beans recipe!
My hubby, the chef who will not cook at home, says I don't cook green beans the same way his granny did.
The last time I had crispy green beans is when we went to TGI Fridays and they have green bean fries. Breaded and fried green beans. As for how to make them crispy, I have no idea, mine never come out crispy either.
My guess is that you're cooking the beans too long. But I went to nursing school and business school, so I don't have much expertise on culinary things.
A website that I do use frequently is kraftfoods.com. They have super easy and quick recipes for just about anything. I'm sure there's a recipe there for good green beans. HTH

HOW TO PREPARE GREEN BEANS
To Blanch or Boil: Wash and trim beans. Put beans in saucepan and cover with water. Remove beans and set side. Bring water to a boil, and drop beans, one handful at a time, into water so that the water continues to boil. Cook to the desired doneness, 3 to 8 minutes. Drain and serve while the beans are still crisp-tender, or add them to another dish for further cooking.
To Microwave: Place a pound of cut-up, washed and trimmed beans in a microwave dish with ¼ cup water. Cover and cook on high 5 to 10 minutes.
To Steam: Wash and trim beans. Bring an inch of water to a boil and place steamer basket with beans over the water. Cover and steam 3 to 7 minutes to desired tenderness.
To Stir-fry: Wash and cut beans into 2-inch lengths. Heat 1 teaspoon oil for every cup of beans. Stir-fry in hot oil 2 to 5 minutes. Remove from heat. If you wish, cover for a minute or so to reach desired doneness.

Thanks for the info. I did blanch them last night for about 2 minutes, then I sauteed them with butter lemon and garlic for another 3 min. They were still tough. I think another 3-4 min to saute and they might be edible. As for the green beans at TGIF's. They are divine. I can make those. You steam the beans for 2 min, then put them in cold water. Make a batter out of egg and flour, milk and put some cajun seasoning in it.( needs to be a little thin) Have a plate of Italian bread crumbs right by the batter. dip the green beans in the batter and then into the bread crumbs and fry just like french fries. They are very very quick to fry so you had better be fast with the slotted spoon. I eat them with ketchup and they are sooooooooo good.

I use my Pampered Chef micro steamer and the fresh veggie option button on my microwave. No guessing-it does it all for me so they come out crisp/tender every time.

Do you grow your own? For some reason last year we grew them and they were the toughest I ever had. I think it's actually the green bean itself. I used to go outside and be able to eat them right off the plant. Crispy. I believe the seeds were from Martha Stewart and they were terrible. Tough as shoe leather.

Is it possible you let them get too big? I know if ours get too big they can be tough. I like mine young and tender.
