Unicornmom,I love reading about what you are having for dinner. What color lentils do you use for your lentil-Pilaf? And could you post your dijon vinagraitte recipe please.

Thanks for asking! I use green lentils and the Redwine dijon vinaigrette is pretty simple its redwine vinegar, dijon mustard, and olive oil. I make a small amount at a time, I am the only one that eats it So the amounts for what I make are

3 tablespoons olive oil You can make it in any amount just use
2 tablespoons of the vinegar 3 parts oil, 2 parts vinegar, and one
1 tablespon mustard part mustard.
