    Post your Thanksgiving menu!

    Appetizers:

    Ring bologna (garlic, plain & hot pepper)

    3 different cheeses

    veggie plate (celery, carrots, grape tomatoes,yellow peppers, cucumbers, black olives & pickles)

    Shrimp cocktail with homemade cocktail sauce

    Homemade stuffed jalopeno peppers (some will have bacon, some won't)

    Homemade stuffed mushroom caps (the non meat eaters & non pork eater is SOL on this one. I won't do it without bacon

    Baked sweet onion dip

    Crackers

    Veggie dip

    Deviled eggs

    THE MAIN MEAL:

    Turkey w/ gravy

    Ham

    Tofur key

    2 potato fillings

    sweet potatoes

    Bread filling

    cheesy mashed potatoes

    3 veggies (I'm not sure which ones yet)

    homemade bread

    Grand buscuits (I have to learn how to do these from scratch)

    Cranberry relish & jellied cranberry sauce

    Homemade butter

    Wilted lettuce salad with homemade hot bacon dressing!

    Desserts:

    Pumpkin rolls

    Homemade pie from my friend with my homemade whipped cream

    My friend's homemade mango cake or some kind of other cake she was talking about!

    The only 2 things that won't be made from scratch is the gravy & the buscuits. Can you believe I never learned how to make gravy because I don't eat it!

    Not sure on desserts yet.....

    and Wobblypops, I think you talked me into the ring bologna lol yum!

    I always end up making more items then I plan on lol, usually one of my kids will request I make something lol

    Copper Pennies is a carrot recipe. I have never had it though.
    Wobbypops, do you make your cranberry relish from scratch? If so, how. Did you get your Apple Cider?
    I tried making a spicy cranberry relish and it is gritty and very tart. The recipe did call for vinegar though so that may be why so tart.

    2 pounds carrots sliced

    1 bell pepper sliced

    Sweet Potato Casserole With Praline Topping

    4 medium sweet potatoes, peeled and halved (about 2-1/2 pounds)
    1/2 cup granulated sugar
    1 1/2 teaspoons vanilla extract
    1 large egg white
    1/2 cup milk
    2 tablespoons UNDILUTED orange juice concentrate
    Cooking spray

    Preheat oven to 350 degrees F.

    Combine first 5 ingredients in a small bowl, stirring to form a streusel. Set aside. Bake potaos in 350 oven until done; mash in a large bowl. Stir in 1 cup streusel, granulated sugar, vanilla, egg white, milk and juice. Spoon into a 2-quart casserole coated with cooking spray; top with remaining streusel. Bake at 350 degrees F for 45 minutes.


    Carrot Souffle


    2 pounds carrots, chopped
    1/2 cup melted butter
    1 cup white sugar
    3 tbsps all purpose flour
    1 tsp baking powder
    1 tbsp vanilla extract
    Pinch nutmeg
    Pinch cinnamon
    3 eggs beaten
    1 tbsp confectioners' sugar for dusting

    Preheat oven to 350 degrees F. Bring a large pot of lightly salted water to a boil. Add carrots and cook until tender, about 15 minutes. Drain carrots and then place in a large mixing bowl. Mash carrots and add melted butter, white sugar, flour, baking powder, vanilla extract, nutmeg, cinnamon and eggs. Using a wire whisk, blend well and transfer to a 2-quart casserole dish and sprinkle with confectioners' sugar. Bake for 30 minutes.

    Serve as a side dish to any main course or use as a filling for pies, tarts or turn-overs.



    Baked Corn Casserole


    1 (15-ounce) can cream-style corn, no salt added
    2 (15-ounce) cans whole kernel corn, drained and no salt added
    3/4 cup egg substitute
    1/2 cup low-fat Swiss cheese, grated
    1/4 cup corn meal
    1/4 cup red bell pepper, diced
    1/4 cup parsley, chopped
    1cup green onions, sliced
    1 tbsp lite margarine, melted
    salt substitute
    cayenne pepper
    vegetable spray
    1/4 cup reduced-fat Parmesan cheese

    Pre-heat oven to 325 degrees F. In a large mixing bowl, combine cream-style corn, whole corn and egg substitute. Using a wooden spoon, blend well to incorporate all ingredients. Add Swiss cheese and corn meal, mixing well after each addition. Fold in bell pepper, parsley, green onions and margarine. Season to taste using salt substitute and pepper. Pour contents into a 2-quart casserole dish coated with vegetable spray. Sprinkle with Parmesan cheese and bake, covered, 40-45 minutes. Remove cover and brown slightly

    those last two recipes sound awesome, I'm going to write them down & try them one day. The copper pennies don't sound too appealing though.

    I also forgot, Eyore, that cranberry relish is something I buy at Bergers. I really got to learn how to make that. I'll have to work on it throughout the year.

    I think he opens around noon. OK, on the relish maybe I'll run out to Bergers and get some and try it. Is it in the deli? I've only been in that store once and that was about 15 years ago. Will have to get together for lunch again maybe after Thanksgiving. Right now I'm going to be a little busy with helping to get my daughter bridal shower together which is the weekend coming up and thanksgiving.
