    Cranberry Apple cider

    4 cups water
    4 cups apple juice
    1 can frozen apple juice concentrate, thawed
    1 medium, peeled and sliced
    1 cup fresh or frozen cranberries
    1 medium orange, peeled and sectioned
    1 cinnamon stick

    In a slow cooker,combine all ingredients,mix well.
    Cover and cook on low for 2 hours or until cider reaches its desired temperature. Discard cinnamon stick. If desired remove fruit with a slotted spoon. This makes about 10 servings.

    2 teaspoons olive oil
    1 medium onion, cut in half and thinly sliced
    2 garlic cloves,crushed
    1/3 cup dry white wine
    1 can diced tomatoes,undrained
    1/4 cup pitted kalamata olives
    1/4 cup loosely packed fresh parsley leaves,chopped
    2 tablespoons drained capers
    1/4 teaspoon crushed red pepper
    4 pieces cod or scrod fillet
    1/4 teaspoon salt
    1 lemon cut into wedges

    In a nonstick 12 inch skillet heat oil over medium high heat.Add onion and cook 8 minutes or until lightly browned and tender. Stir in garlic cook for 30 seconds.Add wine cook 1 minute. Stir in tomatoes with their juice,olives,parsley,capers and crushed red pepper, heat to boiling. Place cod fillets over tomato mixture, sprinkle with salt. Cover skillet and cook 8 to 9 minutes. Squeeze lemon over cod just before serving.

    Giant Fortune Cookies



    • 1/2 c. flour

    • 1 tbsp. cornstarch

    • 1/4 c. sugar

    • 1/4 tsp. salt

    • 1/4 c. salad oil

    • 1/4 c. egg whites (about 2 medium eggs)

    • 1 tsp. vanilla

    • 1 1/2 tsp. water

    Preheat oven to 300 degrees.

    In medium bowl, combine flour, cornstarch, sugar and salt. Stir in oil. Add egg whites, vanilla and water and mix to blend.

    Grease baking tray and draw an 8-inch circle using a cake pan as a stencil. Pour a scant 1/3 cup batter in center of the circle on the baking sheet. With rubber spatula held almost flat, spread and drag batter into a circle, or tilt the pan using a circular motion to make an even circle. Place in oven and bake until cookie turns a light golden brown, 13 to 15 minutes.

    Meanwhile, prepare for the next cookie.

    Remove tray from oven and immediately loosen cookie from pan with metal pancake turner, but let cookie remain on pan. Place one or more fortunes in the center. While cookie is still hot and pliable, use your fingertips to fold the cookie in half to make a half-moon, with the curved side facing upward (the crease should be flat against the pan). Hold briefly, about 5 seconds, until sides begin to set.

    Immediately remove cookie from pan, and using both hands, slowly and gently bend the flat side of the cookie in half over a sharp edge, such as the rim of a deep bowl, pinching the two sides together and holding the now-pointed ends. Hold cookie in this position about 30 seconds until it cools and becomes crisp. When finished, the two points will be close but will not quite touch.

    Make the other cookies, but always begin with a cool baking sheet. Store in airtight container.




    Almond Cookies



    • 3/4 c. (1 1/2 sticks) unsalted butter

    • 1 c. sugar

    • 1 egg

    • 1/2 tsp. almond extract

    • 1/2 tsp. vanilla

    • 1/2 c. ground almonds

    • 2 c. flour

    • 1 1/2 tsp. baking powder

    • 1/8 tsp. salt (omit if using salted butter)

    • 36 whole blanched almonds

    • 1 egg yolk blended with 2 tsp. water

    Preheat oven to 350 degrees. In large bowl, cream butter and sugar, beating with electric mixer until mixture is light and fluffy (3 to 5 minutes). Add whole egg, almond extract, vanilla and ground almonds.

    In a small bowl, sift together flour, baking powder and salt. Add to creamed mixture and blend well; do not overwork dough.

    Shape into 1 1/4-inch balls and place 2 inches apart on lightly greased baking sheets. Flatten each cookie with fingertips and press an almond into center. Lightly brush top of each cookie with egg yolk mixture.

    Bake in lower third of oven until bottoms are lightly browned, edges are barely brown, and tops are still pale (12 to 15 minutes). Let stand on baking sheets for a minute, then transfer to wire racks to cool.




    Sesame Cakes



    • 2 c. flour

    • 1/2 tsp. baking powder

    • 1/4 c. vegetable oil

    • 3 eggs, at room temperature, divided

    • 3/4 c. sugar

    • 1/2 tsp. vanilla

    • 1 c. sesame seed

    Preheat oven to 350 degrees. In a large bowl, sift together flour and baking powder. Make a well in center. Pour oil into well and stir to blend.

    In mixer bowl, combine 2 of the eggs, sugar and vanilla. With electric mixer, beat at high speed until mixture is thick and pale. Add egg mixture to flour mixture, beating until thick and well-blended.

    Shape dough into 1-inch balls. In small bowl, lightly beat remaining egg. Spread sesame seed in plate or shallow pan.

    Dip each cookie into egg to coat lightly, then roll in sesame seed to coat completely. Place cookies about 1 1/2 inches apart on lightly greased baking sheets.

    Bake until cookies are lightly browned and feel firm when touched gently (15 to 20 minutes). Cool on wire racks.

    I am assisting a class in "Dutch Oven Cooking" Saturday for the Boy Scouts Leaderfest. Here are a few things we are going to prepare ...

    DUTCH OVEN RECIPES
    (afternoon session)

    BREAKFAST : TEX-MEX MOUNTAIN MAN BREAKFAST


    ½-1 lb sausage (pre-cooked)
    Med onion
    2 lb. Bag of hash brown potatoes
    ½ pound of grated cheddar
    1 doz eggs
    ½ bag tortilla chips
    Small jar of salsa (optional, serve on the side)

    The following requires 6-9 bottom coals and 12 - 15 top coals:

    Pre-heat 12" Dutch Oven. Slice sausage and onion into small pieces and brown in the bottom of the oven until onions are clear. Stir in the hash brown potatoes and cover; remove cover and stir occasionally to brown and heat potatoes (15 - 20 minutes). Scramble the eggs in a separate container, add broken tortilla chips and pour the mixture over the hash browns. Cover and cook until eggs start to set (10 - 15 minutes). Sprinkle grated cheese over egg mixture, cover and continue heating until eggs are completely set and cheese is melted. Optional: cover cheese/egg mixture with a small jar (~ 1 cup) of SALSA. Cover and cook for an additional 3 - 5 minutes. The SALSA can also be server as a side. Slice and serve like quiche

    (Real men don't eat quiche, but I sure get lots of requests to cook up the Mountain Man).

    Cooking times will vary with the weather and your state of awake, but it's almost impossible to mess up!!


    DINNER : Guadeloupe Chili Pie

    2 lb. ground beef
    1/2 tsp. chili powder
    1 med. onion, sliced
    1/2 tsp. salt
    1 tbs. margarine
    1 8-oz can tomato sauce
    1 15-oz can chili beans
    1 6-oz package cornbread mix

    Brown beef and onions in the margarine in open Dutch oven. Add beans, chili powder, salt, and sauce; cook for 15 minutes in covered oven.
    Mix the cornbread as directed and add to top of meat and beans. Place lid on oven, Cook for 20-30 minutes, until cornbread is done.
    Serves 8 persons.

    Mike's Broccoli Pie

    2 10 oz pkg Chopped Broccoli
    3 c Shredded Cheddar Cheese
    2/3 c Chopped onion
    1 1/3 c milk
    3 eggs
    3/4 c Bisquick
    3/4 tsp Salt
    1/4 tsp white pepper

    Mix broccoli, 2 c of cheese, and onion in Dutch oven. Beat eggs, milk, Bisquick, salt and pepper until smooth. Pour into oven. Bake until toothpick comes out clean, 25-30 min at 400. Top with remaining cheese and melt, 1-2 min longer.

    I am highly amused Jolie. But that's tropical weather compared to what us nurthuners are getting. Shootfire girl, you might have to wear a long sleeve shirt!

    Romanov Russian Black Bread

    Makes 1 2-lb loaf

    1 cup warm water (110 degrees)
    1/3 cup dark corn syrup
    2 (.25 ounce) envelopes active dry yeast
    2 teaspoons salt
    5 cups dark rye flour

    In a medium bowl, stir together the warm water and corn syrup. Sprinkle the yeast over the top, and let stand until foamy, about 5 minutes.

    Add 2 1/2 cups of the rye flour to the yeast mixture, and beat until smooth. Stir in the salt. Set bowl in a warm place, and cover with a cloth or towel. Let rise for 30 minutes.

    Stir in more flour 1/2 cup at a time, until the dough is stiff. Turn the dough out onto a floured surface and knead in more flour by hand as needed to form a stiff but slightly sticky dough. Form dough into a ball. Clean the mixing bowl, and lightly grease it. Place the dough in the bowl, and cover with a towel. Place in a warm place to rise until doubled. This may take as long as 2 hours.

    Turn the risen dough out onto a floured surface, and press out the air bubbles. Roll dough into a loaf, and place into a greased 9x5 inch loaf pan. Turn the loaf so that the seam is on the bottom. Cover the pan with plastic wrap, and let rise in a warm place until doubled,
    about 1 hour.

    Preheat oven to 350 degrees. Remove plastic wrap from loaf pan. Bake for 30 to 35 minutes in the preheated oven, or until the loaf sounds hollow when tapped on the bottom. Bread will not brown very much.

    Standing out at the bus stop with the boys this morning I had on a t- shirt under a sweatshirt with a leather bomber jacket, gloves, hat and scarf -- and I was *still* cold ...

    It was 33* by the temp gauge on my front porch.

    I *HATE* cold weather...
