    Fish soup. Reminds me. Last night at Llewelyn's (the Irish pub) Sarah's boyfriend got fish pie! He LOVES food, is a great cook, and will try anything. I had shepard's pie, Mom had corned beef and cabbage, Sarah had salad (of course) and he got FISH PIE! I was like WHOA! But it smelled wonderful. Thick, fish on the bottom, veggies, mushrooms, spinach and covered in mashed potatoes and broiled lightly. He said it was excellent!

    fish pie? Never heard of it. But I didn't get to go to Ireland We were too late to get tickets for the bus (friend just "knew" there'd still be seats & of course there wasn't !uuhmm like I "knew") so I missed ireland, saw pics tho, BEAUTIFUL!

    Etheline's Oven Barbecued Chicken


    2 tablespoons butter
    1/2 cup chopped onion
    1/2 cup chopped celery
    1/2 cup chopped green bell pepper
    1 cup ketchup
    1 cup water
    2 tablespoons Worcestershire sauce
    2 tablespoons brown sugar
    1/8 teaspoon pepper
    1 chicken, cut into pieces
    salt, to taste


    Preheat oven to 350 degrees. Sauté onion, celery, and green pepper in butter. Add remaining ingredients except chicken, mixing well. Bring mixture to a boil and remove from heat. Arrange chicken pieces in a baking pan and salt to taste. Cover with sauce and bake 1 hour.

    SERVES: 4

    Italian Green Beans

    1/2 cup olive oil
    1 onion, thinly sliced
    1 cup canned Italian plum tomatoes
    1/2 green pepper, chopped
    1/2 cup chopped celery
    1/4 cup water
    1 teaspoon salt
    1/4 teaspoon black pepper
    2 cloves
    1 bay leaf
    6 sprigs parsley
    1 pound cooked green beans


    Heat oil, add onion and cook until soft. Add tomatoes, green pepper, celery, water, salt and pepper. Tie cloves, bay leaf and parsley in a small cheesecloth bag and add to the tomato mixture. Simmer about 25 minutes. Can set aside here until ready to serve. Just before serving, add green beans and heat until very hot. Remove cheesecloth bag and serve.

    SERVES: 6

    Vietnamese Coffee
    ((I'm addicted to this stuff))

    1/3 cup sweetened condensed milk, room temperature
    3 tablespoons medium-fine French-roast coffee
    3/4 cup hot water, just boiled

    Pour the milk into a tall glass. Filter coffee into glass through a stainless steel filter. To brew, remove filter screen and lid. Add ground coffee, replace screen, tightening the screw.

    Pour in a small amount of water. Wait 20 seconds, loosen screw a little. Fill filter basket with water. Cover with lid and let water seep through filter. Remove filter, either stir the coffee and milk together or drink it black and white. Can be served over ice.

    As seen in Food and Wine Magazine. This traditional one cup coffee filter is an icon in many asian restaurants. The single cup slow drip filter infuses the coffee with the full flavor and fragrance of the coffee's oils. Comes in 3 pieces: stainless steel body, lid, and removeable screw type screen. To make coffee, remove lid and screw out the upper screen. Put in the coffee (3 to 4 teaspoons). Tighten the screw moderately. Pour in a little boiling water to fill about 1/4 of the coffee filter. Wait for about 20 to 30 seconds. Undo the screw down screen a couple of turns. Refill with boiling water and replace the lid. Easy cleaning dishwasher safe durable stainless steel construction. Cup is not included.

    never had coffee nips. Not much of a coffee person. now cappaccino in the winter *drool we have some good flavors at the gas stations round here
