SPICY TAMARIND PRAWN SOUP
2 tablespoons vegetable oil
3 garlic cloves, finely chopped
2 stalks lemongrass, trimmed, tough outer leaves removed and finely chopped
1 teaspoon cayenne
5 cups chicken stock
2 ounces tamarind paste
16 small (36 to 40 count) shrimp, peeled, shells reserved
1 cup diced pineapple
2 medium tomatoes
4 okra pods, cut into 4 pieces each
1 tablespoon sugar
1 teaspoon salt or to taste
2 tablespoons Vietnamese fish sauce (nuoc nam)
Fresh lime juice (optional)
2 cups loosely packed bean sprouts
10 fresh Thai basil leaves
To season stock: Heat vegetable oil in medium saucepan. Add garlic, lemongrass and cayenne. Stir briefly until garlic starts to brown. Add chicken stock, tama-rind and shrimp shells. Bring to a boil. Reduce heat. Simmer for 10 to 15 minutes.
To make soup: Strain stock into another saucepan. Bring to a boil. Add shrimp, pineapple, tomatoes, okra, sugar, salt and fish sauce. Adjust seasoning if necessary with lime juice and more salt. Add bean sprouts and basil. Serve immediately.

WILD RICE SOUP
¼ cup butter
4 celery stalks, chopped
2 carrots peeled and diced
1 small onion, diced
1 small red onion, diced
½ cup green onions, sliced
1/3 cup slivered almonds
1 tablespoon dillweed
2 teaspoons black pepper
2 teaspoons garlic salt
2 bay leaves
½ teaspoon turmeric
4 quarts turkey stock
1½ cups wild rice, well washed
½ cup white rice, well washed
½ teaspoon salt
2 egg yolks
4 cups cooked, diced turkey
3 cups sliced mushrooms
To saute vegetables: In skillet over medium heat, melt butter. Add celery, carrots, red onion, green onion and almonds. Sauté, stirring occasionally, for 5 minutes or until slightly tender. Add dillweed, pepper, garlic salt, bay leaves and turmeric.
To cook rice: In separate pot, combine turkey stock, wild rice, white rice and salt. Bring to a boil. Reduce heat. Add saute vegetables. Cover. Simmer for 30 minutes.
To finish soup: Add more stock to soup if too thick. Discard bay leaves. Whisk 1 cup soup into yolks. Whisk back into soup. Add turkey and mushrooms. Heat gently (dont' boil) to warm through.
