    Savory Salsa Corn Bread

    2 boxes corn muffin mix, (8 oz each)
    1 can creamed corn, (15 ounce)
    2 eggs
    1/2 cup sour cream
    1 can chopped green chiles, (4 ounces) undrained
    2 tablespoons soft butter
    3 to 4 Tbs chunky salsa

    In a medium bowl, combine creamed corn, eggs, sour cream,
    chiles, and butter. Whisk together until well combined.
    Add corn muffin mix, stirring well to combine. Generously
    grease your crockpot with butter. Pour batter into
    crockpot. Spoon salsa over the top and cut into the
    batter. Cover and cook on high for about 2 1/2 hours.
    Turn heat off and let cool with lid ajar, for about 15
    minutes. Loosen sides with a knife and invert onto a
    large plate. If a little of the top sticks to the bottom
    of the pot, dollop a little salsa on the top, or decorate
    with sour cream and chopped green onion. Delicious side
    dish!

    L yes! I listened to them all the way home from Memphis. And the last hour, I hit 'repeat' and listened "Along the Bayou" entirely, the rest of the trip.

    Yes -- just melt about a tablespoon butter and scrape all the tasty bits from the bottom of the pan

    HOBO MEATBALL STEW


    Meatball ingredients
    1 lb. ground beef
    1/4 cup milk
    1/4 cup finely chopped onion
    1/2 cup bread crumbs
    1/2 cup cracker crumbs
    1 teas. Worcestershire sauce
    1 egg
    1/2 teas. salt

    Stew ingredients
    4 medium potatoes cut into chunks
    4 medium carrots, cut into chunks
    1 large onion cut into chunks
    3/4 cup ketchup
    1/2 cup water
    1 1/2 teas. vinegar
    1/2 teas. salt
    1/4 teas. pepper

    In a bowl combine meatball ingredients, mix well. Shape into 1 inch balls. Place on rack & bake at 350F for 20 minutes. Place potatoes, carrots and onion in a slow cooker, top with meatballs. Combine the ketchup, water, vinegar, salt & pepper; pour over the meatballs. Cover and cook on high for 4 - 5 hours or until the vegetables are tender.
