NINE DAY COLESLAW
It should be made at least a day ahead so that the flavors have time
to blend. Will keep in the fridge for - Nine Days, hence the name. We have never had any leftover to find out if that is true or not ....
1 large head of cabbage shredded (about 3 pounds)
1 large onion chopped
1/2 pound carrots shredded
2 cups sugar
In large bowl, lightly toss cabbage, onion, carrots, and sugar;. refridgerate.
DRESSING :
1 cup vinegar
1/2 cup vegetable oil (corn or canola because of the light taste)
2 tablespoons honey
2 teaspoon salt
1 teaspoon celery seed
Combine ingredients in saucepan, bring to a boil.. Remove from heat and cool for 1 hour. Pour over cabbage mixture and toss. Chill for at least one hour MINIMUM before serving.

1/4 cup vinegar
1/4 cup white sugar
Directions
In a large bowl, combine cabbage, carrot, onion, vegetable oil, vinegar and sugar. Stir until the ingredients are well mixed. Chill in the refrigerator until serving.
Confetti Coleslaw
1/4 cup honey
3 tablespoons vegetable oil
3 tablespoons apple cider vinegar
1/4 teaspoon salt
1 teaspoon ground black pepper
4 cups shredded green cabbage
2 2/3 cups shredded red cabbage
1/2 cup thinly sliced green onion
2 carrots, peeled and shredded
1 cup minced red bell pepper
In a large bowl, whisk together the honey, vegetable oil, vinegar, salt and pepper. Add green and red cabbage, green onion, carrots and red pepper. Toss to coat evenly. Cover and refrigerate several hours before serving.

Quick & Easy Peanut Butter Fudge
2 cups sugar
1/2 cup milk
1 cup peanut butter, creamy or crunchy
Boil sugar and milk in saucepan for 3 minutes. Remove from heat and add peanut butter. Beat until stiff. Pour into buttered dish. Cool and cut into squares.
Vanilla Wafer Cake
Because it is such a rich cake, with 6 eggs, it is good for holidays & family gatherings. It is so good you can't leave it alone....
1 cup butter
1 cup sugar
1/2 cup milk
1 cup flaked coconut (optional)
6 eggs
1 cup chopped pecans
12 ounces vanilla wafers, crushed
Cream butter and sugar. Add other ingredients in order as listed and mix well. Spray tube pan. Pour mixture in pan and bake at 350 degrees F for about 20 minutes.
Very Easy Blueberry or Cherry Cheesecake
Make this the day before serving. This is a favorite of my children and freezes well.
homemade graham cracker crumb crust:
combine 1 1/2 cups finely crushed or ground graham cracker crumbs with 1/4 cup confectioner's sugar and 6 tablespoons melted butter.
1 8 ounce package of Philly cream cheese
1 package of Dream Whip, prepared as directed or 16 ounce tub
3/4 cup confectioner's sugar
1 can blueberry or cherry pie filling
Pat the graham cracker crust into a 9x13-inch pan (no need to bake it). Mix cream cheese, Dream Whip, and sugar together and put over the crust; chill for about 20 minutes. Top with pie filling. Chill.
Caramel-Apple Cheesecake Pie
A mixture of three favorite desserts -- caramel apples, cheesecake, and apple pie -- this dessert will delight even the most picky of eaters. The recipe may seem complicated, but it really is not too hard. It is most definitely worth the extra time and effort to make. The pie can be made up to 24 hours in advance.
2 tablespoons butter
1 cup brown sugar, divided
4 large tart apples, peeled, cored, and sliced (or use 2 large cans apple pie filling if you are pressed for time.... )
16 ounces caramel ice-cream sauce, divided
8 ounces softened cream cheese
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons pure vanilla extract
1 egg
9-inch graham cracker crust
Preheat the oven to 375 degrees. Melt the butter in a large heavy skillet over medium heat. Add half of the brown sugar (1/2 cup) and cook, stirring constantly until the brown sugar melts. Add the apples and cook for 10-12 minutes, stirring constantly, until the apples are tender but not mushy. Set the apples aside. In a medium bowl, beat the cream cheese and remaining 1/2 cup brown sugar until light and fluffy. Add the cinnamon, nutmeg, vanilla, and egg and beat until very smooth. Carefully fold 3/4 cup of the caramel sauce into the cream-cheese mixture. Do not overmix; some marbling is fine. Mix another 1/2 cup of caramel sauce with the apples, making sure to coat them evenly. Spoon the apples into the pie crust. Top with the cream cheese mixture. Bake for 35-40 minutes, or until the pie is golden brown and set in the center. Cool at room temperature and refrigerate for at least 4 hours. Serve the pie with the remaining caramel sauce.
Cpbaby's TURTLE CHEESCAKE
Make a cheese cake according to the recipe inside the Philadelphia Cream Cheese Box. You can buy a ready made crust or make your own with graham cracker crumbs, sugr and melted butter.
2 pkgs of cream cheese softened
2 eggs

There is an order to add the ingredients but I just throw all of them in a mixing bowl and mix til smooth. Pour into crust and bake at 350 for 35 minutes. let cool completely. Sprinkle chopped pecans and milk chocolate chips on top and drizzle (or pour, if you prefer) caramel ice cream topping over chips and pecans. It looks so hard to make and is soo easy and WONDERFUL!
Easy Peach Cobbler in Crock Pot
2 pounds fresh or canned peaches, sliced
2/3 cups oats
2/3 cups all-purpose flour
2/3 cups light brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
3/4 cup softened butter or margarine
Place peaches in crock pot. Combine oats, flour, sugar, and spices. Add butter and stir until crumbly. Pour mixture over peaches. Cook on low 3 hours. Wonderful and easy!

Melon Balls with Virginia Ham
16 oz. Virginia Ham sliced very thin
1 honeydew melon
1 cantaloupe
Toothpicks
Cut ham slices into strips that are about 1 inch wide by 4 inches long. Halve both melons and remove all the seeds. Use a melon ball spoon to form 1 inch round melon balls. Drain melon balls on paper towels to remove excess moisture. Wrap each melon ball with a strip of ham and secure with a toothpick. Chill before serving.
Virginia Ham is salty which works well with the sweetness of the melon. If you are unfortunate enough to not have access to Virginia Ham, just use another brand of salt-cured ham.
Stuffed Eggplant
4 medium eggplants
2 pounds lean ground beef
2 onions, finely chopped
4 cloves garlic, minced
4 medium tomatoes, chopped
2 eggs, beaten
1/2 tsp. ground nutmeg
1 tsp. ground cumin
Salt and pepper to taste
1 pound mozzarella cheese, shredded
Trim tough ends off of eggplants then slice them in half lengthwise. Cook eggplants in lightly salted boiling water for 7 minutes or until just barely tender. Drain and set aside to cool. Cook ground beef in frying pan and then drain off fat. Add onion, garlic and tomatoes and mix well. Cook over medium heat for about 5 minutes, stirring now and then. Transfer meat mixture to a bowl. Scoop out cooled eggplant halves, leaving about 1/2 inch thick shells and reserve the pulp. Remove the seeds from the pulp as best you can. Add pulp to the ground beef mixture then stir in egg, nutmeg, cumin, salt and pepper and half of the cheese. Spoon mixture into the eggplant shells. Place the shells in a baking dish and sprinkle with the remaining cheese. Bake in a 350-degree oven for 30 minutes or until cheese is lightly browned.
Shrimp Rockefeller
2 pounds shrimp, cooked and cleaned
1/2 cup butter
1-1/2 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon Accent
1/4 teaspoon Tabasco
1 teaspoon celery salt
1/2 cup chopped green onions
1/2 cup chopped parsley
2 cloves garlic, minced
2 packages frozen chopped spinach, thawed and drained
3 slices white bread, without crusts
3/4 cup water
2 teaspoons melted butter
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese
Melt 1/2 cup butter and blend in seasonings. Add green onions, parsley, garlic, and spinach and sauté 10 minutes. Pour water over bread and break up. Add to vegetable mixture and stir. Arrange shrimp either in bottom of casserole or in individual dishes and cover with vegetable-bread mixture. Combine melted butter, crumbs, and cheese. Sprinkle mixture over top and bake at 400 degrees for 15 minutes. May be refrigerated overnight before baking.
SERVES: 6 (10 to 12 as an appetizer)
Cucumber Salad
3 cucumbers, peeled, seeded and sliced
1/3 cup nonfat plain yogurt
1 tsp. lemon juice
1 tsp. fresh mint, chopped
1 Tbsp. olive oil
1/2 tsp sugar
Salt and pepper to taste
Place cucumbers in a bowl. Combine remaining ingredients and mix well. Pour over cucumbers and stir to coat.

Granny Smith Apple Pie
6 Granny Smith apples, cored and cut into slices
1 Tbsp. lemon juice
1/2 cup sugar
2/3 cup brown sugar
1/3 cup flour
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1 9-inch deep dish piecrust
1 regular 9-inch piecrust to use as the top crust
You can peel the apples if you wish but it is not necessary. Combine apples and lemon juice in a bowl and toss. Combine sugars, flour, cinnamon and nutmeg and sprinkle over apples, then stir to coat. Place apples in the deep dish piecrust, top with remaining piecrust and crimp along the edges. Sprinkle with sugar and cut several slits in the crust to vent. Bake at 425 degrees for 20 minutes, then reduce heat to 350 degrees and bake for 30 minutes.
