Light and Lively Gazpacho
1 (30-ounce) can diced tomatoes
1 (46-ounce) can tomato juice
1 cup red wine vinegar
1/4 cup olive oil
3 tablespoons Worcestershire sauce
1 teaspoon freshly ground pepper
3 to 4 cloves garlic, minced
2 red bell peppers, sliced
1 cucumber, peeled, seeded, diced
3 to 4 ribs celery, diced
1 medium red onion, minced
Salt to taste
Tabasco sauce to taste
1 avocado, sliced
Combine the tomatoes, tomato juice, vinegar, oil, Worcestershire sauce, pepper, garlic, bell peppers, cucumber, celery and onion in a large bowl.
Season with the salt and Tabasco sauce.
Stir gently until mixed.
Chill, covered, in the refrigerator for 3 to 4 hours.
Ladle into individual soup bowls.
Garnish with avocado slices.
YIELD: 12 servings
Zucchini Cakes
((IF you like crab cakes, try this...you'll be surprised!))
2 1/2 cups shredded zucchini
1 egg, slightly beaten
2 tablespoons chopped onion
1 tablespoon butter, melted
1 teaspoon prepared mustard
3/4 teaspoon seafood seasoning
1 cup seasoned bread crumbs
2 tablespoons vegetable oil
In a bowl, combine the zucchini, egg, onion, butter, mustard and seafood seasoning; mix well. Shape into 5 patties; coat with breadcrumbs. Heat oil in a large skillet; fry patties for 4 minutes on each side or until golden brown. Drain on paper towels.
NOW...what is seafood seasoning??? I looked at both our local stores and they had seafood breading, seafood boil etc., but no 'seafood seasoning.'

Ice Cream Crunch Balls
2 cups of crushed chocolate cookie sandwich cookies ( about 24 cookies)
1 cup of finely chopped pecans
1 cup of slivered almonds
1 teaspoon peppermint extract
1 container (1/2 gallon) vanilla ice cream, firm
popscile sticks
Combine the cookie crumbs and nuts. Add the peppermint extract and mix well. Pour generous amounts of the mixture onto waxed paper.
Scoop 1/2 cup of vanilla ice cream onto crumb mixture. Roll quickly and
firmly into a ball, covering ice cream completely with crumbs.
Place ice cream ball in a foil cupcake liner.Insert popsicle stick. Repeat until 8 ice cream balls have been formed. Freeze about 1 hour or until firm. If ice cream becomes soft, return to freezer 30 minutes before reshaping

Pina Colada Smoothie
1 6 oz container nonfat coconut yogurt (frozen)
1/2 banana (frozen)
1/2 of a 20 oz can crushed pineapple
1 cup nonfat milk
Place all ingredients into blender.
Blend well until creamy consistency is reached!

Frozen "Creamsicle" Cake
16 low-fat vanilla wafers -- finely ground
2 teaspoons finely grated fresh orange zest
2 teaspoons unsalted butter -- melted and cooled
1 tablespoon light corn syrup
1 cup orange sorbet -- slightly softened
1 cup nonfat vanilla frozen yogurt
Line loaf pan with a double layer of plastic wrap, allowing a few inches of
overhang along sides. Stir together cookie crumbs, zest, butter, and corn
syrup in a small bowl, then press into bottom of loaf pan. Spread sorbet
evenly over crumb crust and freeze 30 minutes to harden.
While sorbet is freezing, slightly soften frozen yogurt. Spread evenly over
sorbet and freeze, covered with plastic wrap, until firm, at least 2 hours.
Using plastic wrap as an aid, lift frozen cake out of pan, then peel off
plastic. Let stand 5 minutes to soften, then cut crosswise into 4 slices.

EGGS FLORENTINE BRUNCH ITEM
2 tsp. Creole seasoning
1 cup creamed spinach
1 English muffin
2 eggs
½ lb. peeled shrimp
2 cups white sauce
½ cup white wine
¼ cup green onions
1 Tbls. chopped garlic
2 Tbls. butter
Poach eggs in simmering water and remove. Toast English muffin and top with creamed spinach and egg. Sauté shrimp and garlic in butter and add white wine and reduce. Add white sauce, seasoning, and stir well. Pour over eggs.
SHRIMP CHARDONNAY
12 shrimp
½ cup sliced mushrooms
1 oz. green onions chopped
½ Tbls. freshly cracked black pepper
½ cup white wine
2 oz. butter
1 oz. mixed seasoning
Preheat butter in sauce pan and add shrimp. Cook shrimp ¾ through. Add mushrooms. When mushrooms are cooked, add seasoning and black pepper. Deglaze with white wine and reduce slightly. Slight browning of butter is preferred before deglazing.
CAJUN PASTA
1 cup sliced andouille sausage
½ cup sliced red bell peppers
½ cup sliced green bell peppers
¼ cup diced tomatoes
½ cup crawfish tails
¼ cup green onions
1 Tbls. Creole seasoning
2 cups white sauce
8 oz. pasta, cooked
2 Tbls. butter
Sauté andouille sausage in butter for several minutes until the sausage is rendered. Add bell peppers, crawfish, and tomatoes. After bell peppers are cooked, add white sauce, seasoning, and stir well. Serve over pasta and finish with green onions.
SOFT SHELL CRAB VIEUX CARRE
1 large jumbo soft shell crab (fried)
6 shrimp
2 oz. green onions, chopped
2 oz. butter
1 oz. Creole seasoning
2 cups mornay sauce (see recipe)
2 oz. grated cheddar
Sauté shrimp in butter until done. Add seasoning, green onions, and mornay sauce and stir. Pour over fried soft shell crab and top with grated cheddar.
CHICKEN JENEE
1 boneless chicken breast, grilled
½ cup chopped artichoke hearts
1 cup mornay sauce
1 cup chopped spinach
½ cup bacon bits
½ Tbls. Creole seasoning
2 oz. butter
6 shrimp
Sauté shrimp in butter. Add spinach, artichoke hearts, seasoning, and bacon bits. Heat until spinach is wilted. Add mornay sauce and stir. Serve over the chicken breast.

The pics are *still* at WalMarts ! I personally went aroound the counter and looked thru the drawers this evening. I will call tomorrow...
The trip was fine I *HATE* fishing The kids had a blast and we didn't leave any of them on the beach ... it was a close thing. I *HATE* fishing The surf was rough and the wind was relentless. No bugs, though. :) I *HATE* fishing We caught NO fish and only three crabs and a bare handfull of shrimp. I *HATE* fishing We let them all go. I am the beachcomber - Meg & I have a basket full of shells (most will end up n my compost) I *HATE* fishing My nephews wouldn't mind, and whined incessently - if we go again they will not be invited. My nieces were cool - they can come. Did I mention I *HATE* fishing ?
