Thought we might share some ideas for Christmas treats - teacher gifts, tokens of appreciation, something simple for a co-worker....
EASY CHRISTMAS DIVINITY
This divinity is so easy to make in the microwave and so good. You won’t ever make it any other way again! Makes a great gift, too. This recipe is adapted from a Sharp Carousel Microwave Cookbook that came with my first microwave many years ago.
2 cups white granulated sugar
1/3 cup water
1/3 cup light corn syrup
1/4 teaspoon salt
2 egg whites
1 teaspoon vanilla extract
1/2 cup pecans or nuts of your choice, chopped
Combine sugar, water, corn syrup and salt in a glass casserole dish. Cover with saran wrap and microwave on high for 5 minutes. Remove from microwave and take off saran wrap. Stir well and return to microwave uncovered. Cook on high for another 4 to 5 minutes until reaches hard ball stage when a little is dropped in cold water. Remove and cool about 4 minutes. Beat egg whites until stiff with mixer. Pour sugar mixture over egg whites beating constantly with mixer until mixture starts to lose its gloss and holds together. About 4 or 5 minutes. Stir in vanilla and nuts. Drop by teaspoonful onto wax paper. Makes about 25 pieces depending on size you make them. Enjoy!
Note: To clean glass bowl you used in microwave soak in warm soapy water immediately after emptying sugar mixture.

My grandmother used to make these little candies for the holidays and it only took her a few minutes to whip up a batch to give as gifts. She would get a pretty red cookie tin and add some tissue paper and put these little creamy mints inside. Everyone loved them. Sometimes she would add food coloring to make them red and green or whatever color looked festive. Sometimes she would roll them in sugar or add little silver or red jimmies and other decorations. We loved them too!
Cream Cheese Mints
4 ounces cream cheese, room temperature
exactly 1/2 teaspoon peppermint or spearmint extract
3 cups powdered sugar
Beat the cream cheese with a mixer until smooth, add the extract and some of the powdered sugar and mix until combined well.
Then add the remaining sugar and mix until well combined.
Shape into 1/2" balls and place them on a parchment lined cookie sheet.
Press flat with a fork and then chill until ready to serve.
Store in the refrigerator in an airtight container for up to two weeks or freeze for up to two months.
