Thought we might share some ideas for Christmas treats - teacher gifts, tokens of appreciation, something simple for a co-worker....




EASY CHRISTMAS DIVINITY

This divinity is so easy to make in the microwave and so good. You won’t ever make it any other way again! Makes a great gift, too. This recipe is adapted from a Sharp Carousel Microwave Cookbook that came with my first microwave many years ago.

2 cups white granulated sugar
1/3 cup water
1/3 cup light corn syrup
1/4 teaspoon salt
2 egg whites
1 teaspoon vanilla extract
1/2 cup pecans or nuts of your choice, chopped

Combine sugar, water, corn syrup and salt in a glass casserole dish. Cover with saran wrap and microwave on high for 5 minutes. Remove from microwave and take off saran wrap. Stir well and return to microwave uncovered. Cook on high for another 4 to 5 minutes until reaches hard ball stage when a little is dropped in cold water. Remove and cool about 4 minutes. Beat egg whites until stiff with mixer. Pour sugar mixture over egg whites beating constantly with mixer until mixture starts to lose its gloss and holds together. About 4 or 5 minutes. Stir in vanilla and nuts. Drop by teaspoonful onto wax paper. Makes about 25 pieces depending on size you make them. Enjoy!

Note: To clean glass bowl you used in microwave soak in warm soapy water immediately after emptying sugar mixture.

My grandmother used to make these little candies for the holidays and it only took her a few minutes to whip up a batch to give as gifts. She would get a pretty red cookie tin and add some tissue paper and put these little creamy mints inside. Everyone loved them. Sometimes she would add food coloring to make them red and green or whatever color looked festive. Sometimes she would roll them in sugar or add little silver or red jimmies and other decorations. We loved them too!

Cream Cheese Mints

4 ounces cream cheese, room temperature
exactly 1/2 teaspoon peppermint or spearmint extract
3 cups powdered sugar

Beat the cream cheese with a mixer until smooth, add the extract and some of the powdered sugar and mix until combined well.
Then add the remaining sugar and mix until well combined.
Shape into 1/2" balls and place them on a parchment lined cookie sheet.
Press flat with a fork and then chill until ready to serve.
Store in the refrigerator in an airtight container for up to two weeks or freeze for up to two months.

I saw this and thought it was so cute!!! What do you think? Take a can or glass Jar and wrap a rubber band around it. Place candy canes around the jar inside the rubber band until you can no longer see the container. Cover the elastic with ribbon and fill with your own flowers, candy, decorations, etc. Super easy and inexpensive way to bring some holiday cheer to your office, home or dinner table!

Wassail::

Note this is for a large gathering you will need to reduce it for small groups.

2 gallon apple juice
1 gallon cider
6-8 oranges cut in half and juice squeezed into pot add the squeezed oranges also
in a cheese cloth put 12 whole cloves, 12 whole all spice berries
(you can use ground cloves and allspice if you do no need for the cheese cloth)
4-6 sticks of cinnamon
about 2-3 tablespoonfuls of ground ginger
and 1-2 tablespoonfuls of nutmeg
one bag of whole cranberries or you can add 2-3 cups of cranberry juice, pineapple juice or peach juice

let this simmer on low heat for 1 and half to 2 hours before serving
(it can simmer all day if you wish)

GREAT RECIPE FOR THE HOLIDAY SEASON

CROCKPOT CHEX MIX

Fill crock pot with your favorite cereal, pretzels and nuts. Melt 1/4 cup butter, add 4 tsp worchestershire sauce, 1 tsp salt, 1 tsp garlic powders, 1/2 tsp onion powder, 1/4 tsp sugar, dissolve & stir. Pour over cereal & mix. Cook on LOW for 2.5 hours, open lid & stir every 30 minutes.

Oreo Truffles

1 pkg (8 oz) Cream Cheese, softened
1 pkg Oreo cookies, finely crushed, (about 4-1/4 cups), divided
2 pkgs (8 squares each) Semi-Sweet Chocolate, melted


Mix cream cheese and 3 cups cookie crumbs until well blended. Shape into 49 (1-inch) balls. Dip into melted chocolate; place on waxed paper-covered baking sheet. Refrigerate 1 hour or until firm.

Who doesn't love snickerdoodle cookies? These are stuffed with gooey caramel. Sooo irresistible!

Snickerdoodles are a favorite in our home this time of year. And this year, instead of the traditional cookie, weʼre giving it an easy and gooey twist by adding a caramel square inside every center!

What is it with stuffing things this time of year? Stuffed turkeys, stuffed potatoes and now stuffed cookies?! I guess a little “stuffing” makes everything taste better, especially when caramel is involved! The sweet gooeyness pours out of the center when the cookies are warm, and theyʼre beyond incredible.

You can also garnish them with a dash of sea salt... because who doesn't love salted caramel?

EASIEST recipe for ENGLISH TOFFEE.

Takes 20 minutes to make. Oh yum!

1 cup butter
1 1/4 cups white granulated sugar
2 tablespoons water
1/4 cup slivered/chopped almonds
1 cup chocolate chips

Butter a 10x15 inch jellyroll pan. In a heavy skillet, over medium heat, melt butter. Stir in sugar and water. Bring mixture to a boil. Cook, stirring constantly until the sugar is golden. Pour the mixture into the prepared pan and sprinkle the chocolate chips on top. Let stand for a minute then spread the chocolate over the top. Add almonds 5 minutes before chocolate is completely set. Then let cool completely before breaking into pieces.

Heat the oven to 350. On a cookie sheet lined with parchment paper arrange unwrapped peppermints into a design of your choice bake for about 5-7 minutes until the are slightly melted and are forms together take out of the oven and let cool. When cool enough to touch peel paper off and you have a plate. For the bowl do the same except when you pull the peppermints out form the bowl over a cup and pull down. Hold for a few minutes till it holds and let cool until you can touch. Gently pull off the paper and set the bowl up right and let cool completely.

You can spray with a clear sealer to keep it, but only use it for wrapped candy because of the toxins in the sealer!

Yield: 81 Servings

Ingredients

•1-1/2 pounds white candy coating, coarsely chopped
•1 can (14 ounces) sweetened condensed milk
•1/8 teaspoon salt
•1-1/2 teaspoons vanilla extract
•1-1/2 cups chopped gumdrops ( or DOTS )

Directions

•Line a 9-in. square pan with foil; set aside. In a heavy saucepan, combine the candy coating, milk and salt. Cook and stir over low heat until candy coating is melted. Remove from the heat; stir in vanilla and gumdrops.

•Spread into prepared pan. Cover and refrigerate until firm. Using foil, remove fudge from the pan; cut into 1-in. squares. Store in an airtight container at room temperature. Yield: about 3 pounds.


Nutritional Facts 1 serving (1 piece) equals 74 calories, 3 g fat (2 g saturated fat), 2 mg cholesterol, 11 mg sodium, 12 g carbohydrate, 0 fiber, trace protein.

DO NOT use white chocolate chips. At our walmart 'white candy coating' is sold with the chocolate chips on the top shelf. It comes in a block either is white or chocolate and it is called candyquik. It is around $3.00 at our stores.
