I realized yesterday I do something else besides freezing extra food. Both my DH and DS17 dislike sandwiches for lunch. DH can easily spend $10 - 15 a day eating out and DS can only get fast food at school. I bought containers and make them dinners to take with them. DH also eats them during the week since he works second shift and I'm not usually around to make him a decent meal before work.

I know most school kids don't have the freedom to take lunches that require refrigeration and heating like my kid does but I still can easily save $50 a week for DH and keep son from eating McD's food every day. DS takes a balanced meal with a side salad and is perfectly content.

I always make extra with the intent of having leftovers. Dh take great home cooked meals for dinner to work. The guys always have to check out dh's dinner! Also if I find we are getting too many leftovers in the fridge then we have a "smorgasboard" night. We all have whatever leftover we want and I don't have to cook! Win Win IMO!

I also luck out because my Nana lives around the corner....she always cooks for an Army and eats very little leftovers. She is always calling me to come pick up her leftovers! That saves me big $$ A couple times a month she will send over the better part of a roast which I can make into a whole new meal! I love it!

Thats what I have been doing with leftovers lately. I spend an average of $5 a day for lunch at work and bringing leftovers really helps me save my money.

Now I need to cook a dinner, make double, freeze one and still have enough left over for lunches the next day LOL

I made homemade mac-n-cheese for a side dish Sunday. I made a double batch so I'd have plenty left for lunches. 1 DH and 2 teenage boys left me enough for ONE lunch. Gluttons.

It was only the second time in his life my 17 year old son had tasted mac-n-cheese. I despise the taste and it's wasted calories so I never make it. He had some at a restaurant and was hooked. I am a pathetic mother.

My problem is it takes a month of Sundays to get the container back home and Im way too cheap to keep replacing even those "cost friendly" replaceable containers as they're not cheap enough LOL

That is just the reason I save up deli containers, butter bowls and such so if they don't come home it is no big loss... I even save the mico dishes from other frozen entree meals to re-fill with leftovers..
