I have the day off, cooking whole wheat pasta with tomato sauce made from a gazzilion tomatoes from this past summer I canned,with fresh basil/thyme, roasted garlic and really good shaved parmesan cheese, (JT gets a grilled chicken breast on his)..wild greens with toasted walnuts salad and Raspberry Dressing, leftover berries from the garden as well..homemade Brioche, a very YUMMY bread, ask Chef Sheila...served with just right temp non salted butter and strawberry jam, homemade and homemade sorbet, this is not raspberry...it is Meyer Lemon and homemade wafers..such a busy cooking day!
This recipe made lots of cookies for snacking and JTS lunch...and over tea at 9:00 PM..and at breakfast..at 5:30 AM...

I've been baking gluten free bread, brownies and a cake today. I get ambitious on a snow day off from work. For dinner we're having rice fetuccine and a topping made with EVOO, garlic cloves chopped, 6 roma tomatoes chopped, hot Italian sausage and fresh parsley. I cook it for about 30 mins. in a frying pan then top the cooked fettucine with it. It's super easy to make.

I'm not really sure yet. We just got home from a dr. appt. and I'm exhausted! So we'll probably swing by the Masthead or grab a pizza...something easy.

"Stouffer's" grandma's chicken & vegetable rice bake, with spinach salad
and homemade bread. For dessert it's apple pie.

I have a roast with the fixings in the slow cooker, smells yummmy in here. I am going to make browines for dessert.

I made Latino-Style Chicken and Rice aka Arroz con Pollo. I watched America's Test Kitchen one day and they made it. It was pretty darn good too! DH said it was a keeper. LOL!!

I made steaks, fresh asparagus, some pasta and some onions and mushrooms on the side for the steak. very good! :)

in school tonight we learned how to make risotto, and rice pilaf, we also cooked a rissotto made with a grain call fiotto, a Bulgar pilaf. but I did not eat any. they had the heat turned up way to high, I got a bit overheated and was feeling sick to my tummy.
