View Full Version : Thawing a Turkey..

This is not a joke, as a Chef, I am used to being a part of a team that made, say 75 Turkeys.
This year, I am a volunteer and am bring only 2 10 pound turkeys.
When should I start thawing these?
I KNOW this sounds silly, but in a huge kitchen with a huge cooler, we had them out for 5 days in the cooler.
I understand I can thaw these in my bath tub, but I am cluess when to start and if I have enough room in the fridge here, or at JTS or split them up?
It is hard for me make "only 2"..HELP?
Any advice?

I just took out my little 7 lb breast this morning. You should definitely take them out now.

are you going to brine them??

if so, take them out now and then the day before ... give them a 24 hour brine bath.

they need 24 hours of thawing for each 4 lbs HTH

I took my 10 to 12 pound turkey out and put it in the refrigerator yesterday. But today should be ok.

I would put them in the fridge now and do the bath soak tomorrow night and wednesday all day.

Thanks, I knows it sounds dumb, but I am used to doing many, many at once and just 2 seems so odd, my brain doesn't work when it is only 2...fingers crossed as they are for donations..
