Does anyone have a simple and easy way to make one homemade? Hubby loves them but I really don't have hours to spend in the kitchen after working two jobs. Any ideas? Thanks in advance.

My mom makes this one.
* 1 cup white sugar
* 1/2 cup all-purpose flour
* 1/4 teaspoon salt
* 3 cups milk
* 4 eggs
* 3 tablespoons butter
* 1 1/2 teaspoons vanilla extract
* 1 cup flaked coconut
* 1 (9 inch) pie shell, baked
DIRECTIONS
1. In a medium saucepan, combine sugar, flour and salt over a medium heat; gradually stir in milk. Cook and stir over medium heat until the mixture is thick and bubbly. Reduce heat to low and cook 2 minutes more. Remove the pan from heat.
2. Separate the egg yolks from whites. Beat the egg yolks slightly. Gradually stir 1 cup of the hot mixture into yolks. Return the egg mixture to the saucepan and bring the entire mixture to a gentle boil. Cook and stir 2 minutes before removing the pan from heat.
3. Stir butter, vanilla, and coconut into the hot mixture. Pour the hot filling into the baked pie crust. Cool. Cover and chill to store the pie if not serving immediatel

heres an easy one I found on allrecipes.com .......I had one that I cut out of a Womans world magazine years ago and I cant find it and I am about to freak out! I use the recipe all the time and I take it to all the holiday get togthers....the only difference in this recipe from the one I really like is that I toast the coconut, and to do that you can put the flakes of coconut on a microwave safe plate and put in microwave for 30 sec., after 30 seconds take out and stir it around and if not browned enough put in for another 20 seconds and keep stirring it after each time until browned(this really smells up the house really nice). I also add 1/2 teaspoon of coconut extract to the pudding mixture before mixing as well.......if I find the recipe I will give it to you then, its really simple with no cooking involved and its extremely good, I have had people pay me to make them one for their holiday gatheringss lol
1 (5.1 ounce) package instant vanilla pudding mix
1 1/2 cups cold milk
1 (8 ounce) carton frozen whipped topping, thawed, divided
3/4 cup flaked coconut, toasted, divided
1 (9 inch) pastry shell, baked or graham cracker crust
DIRECTIONS
In a mixing bowl, beat pudding and milk on low speed for 2 minutes. Fold in half of the whipped topping and 1/2 to 3/4 cup of coconut. Pour into crust. Spread with remaining whipped topping; sprinkle with remaining coconut. Chill.
