I just got about 75 8oz cartons of milk from the school cafeteria I work at becaue we are on vacation & it would be out dated 1 day after we get back from vacation.
This will save me money on milk...wooohoo!
So anyone know any good baking recipes that use milk?

Here is a recipe for a "hot milk cake" the only catch is they didn't put the secret in there - once you add the hot milk to the mixture you need to have it in the oven in less than 1 minute or it will not rise properly. It is really good and we usually just top it with confectioner's sugar. It is also good with peanut butter icing (peanut butter, confectioner's sugar and milk)
Hot Milk Layer Cake
4 eggs
2 cups sugar
2 cups all-purpose flour
2 teaspoons baking powder
Pinch of salt
1 vanilla extract or other flavoring
1 cup milk
1/4 pound (1 stick or 8 tablespoons) butter
Preheat oven to 350 degrees. Grease and flour two 8- or 9-inch cake pans.
Beat eggs well -- until light (5-10 minutes). Gradually add sugar and beat until light and fluffy. In separate bowl, combine flour, baking powder and salt. Add to creamed ixture and fold together. Heat milk and butter in a saucepan until hot. Add hot milk mixture and vanilla to cake batter and stir until combined, then pour into prepared pans. Bake 25 to 30 minutes, or just until a toothpick inserted in the center comes out clean. Cool on a wire rack. Frost with favorite icing.
Makes two 8- or 9-inch layers.

You can freeze milk. Just make room for expansion. Then you can take your time using it.

that is quite a bit of milk .. I'd get to baking - waffles, pancakes, & freeze 'em in big batches.
mac 'n cheese - cakes, cookies, muffins -

Thank you!
My daughters already drank a few & we are buying chocolate syrup to add to them for chocolate milk.
I am making Cheddar bay buscuits so I will use a few for those.
I keep half & gave half to my mother-in-law.

I found that I can freeze milk in the green 2 liter mt. dew bottles and it does really well. When I take it out to use, it last allot longer in the fridge as well for some reason when they are in the Mt. Dew bottles. Also you can lay the bottles on their side in the bottom shelves and they won't leak. :)
