I just finished Between, Georgia and in one part of the book, they were eating beef roast and "Velvet potatoes". WHAT ON EARTH are velvet potatoes? I have googled it and cant find a recipe for them. :confused:

Maybe its a fancy name for mashed potatoes?

I really have no idea. lol

Velvet Mashed Potatoes

12 medium boiling potatoes (4 pounds), peeled and cut into large pieces
3/4 to 1 cup milk
1/2 package (8-ounce size) cream cheese, cut into cubes and softened
1/2 cup margarine or butter, softened
1/2 teaspoon salt
1/8 teaspoon pepper

Heat 1 inch water (salted if desired) to boiling in Dutch oven. Add
potatoes. Cover and heat to boiling; reduce heat. Cook 30 to 35 minutes or
until tender; drain. Shake pan with potatoes over low heat to dry.

Mash potatoes in large bowl until no lumps remain. Beat in milk in
small amounts, beating after each addition (amount of milk needed to make
potatoes smooth and fluffy depends on kind of potatoes used). Add cream
cheese, margarine, salt and pepper. Beat vigorously until potatoes are
light and fluffy.

*If using spread, use only stick that has more than 65% vegetable oil.

Note: For the fluffiest potatoes, use a hand-held potato masher or electric mixer

Like this recipe. Never thought of adding cream cheese to mashed taters.

And to cpbaby, never heard of velvet taters either. Velvet is a fabric and associated with taters, I thought EEWWWWWWW!!!!!

I took it to mean they were pieces of potatoes, like cooked with the roast or something, but I seriously have no idea. I wonder if the author would be insulted if I wrote her asking what velvet potatoes were?

I've always added cream cheese to my mashed potatos. My kids call them potatos in a cloud. They're so fluffy and delish!

I dont think the author would be insulted if you were to write and ask...it might be a family recipe of hers and she might share it with you. I have wrote to my fav. author just to tell her that I loved her books and one in particular and she wrote me back delighted to get some feedback......worth a shot.

Never thought about putting cream cheese in..i will have to try that some time.
