MK's Chicken and Rice Casserole

1 stick butter
1 cup uncooked regular white rice (don't use instant)
1 can French Onion Soup
3/4 cup water
4 boneless, skinless chicken breasts
1 envelope onion/mushroom soup mix
Salt, pepper and paprika

Preheat oven to 350 degrees. Place butter in a 13 x 9 inch baking dish and put in the oven until melted. Add the rice, CAN soup and water; mix well. Place the chicken on top of the rice mixture. Salt and pepper it as desired and sprinkle with paprika and dry soup mix, if desired. Cover with foil and bake at 350 degrees for about an hour, until all the water is absorbed.

*Notes* If using the crockpot, increase water to 1 cup and cook on low about 6 hours. Also, stir rice once or twice during cooking or you will get a few undone grains.

Ok guys....I don't cook at all.....BUT....my fiance does and so tonight I'm going to surprise him by trying this. Any words of wisdom or warnings? I'm going to do it in the oven, not the crockpot.

I haven't seen her BUT.....I couldn't find CANNED french onion soup....only packets of onion soup.....HELP!!!! Can I still do this recipe? Will it change any?

HELP!!!! :confused:

Yep,just make it the same way but with a pack of frech onion soup :)

Okay...I rarely cook at my house either (28 years of marriage and hubby has always been the cook.)

Anyway, I tried this recipe last night and Bob absolutely loved it.

The only thing is that I used a can of Progresso French Onion Soup...which is larger than a typical can of soup. As a result, the liquid wasn't all absorbed after an hour. There was actually quite a bit left.

Should I have omitted the 3/4 cup of water when using the Progresso soup?

You guys are the best! You just set my mind at ease. I'll make this tonight and see if my fiance likes it....let's hope because he is an AMAZING cook. If I can get him to like it then I'll know it's good.

Made this last night and, guys, I really can't cook....but I was able to do this and it turned out GREAT!!!! I even had to improvise because I wasn't sure how to convert the measurements since I didn't have canned onion soup...just the pakcet.

Anyway, thank you so much. My fiance loved it and wants me to keep trying with the cooking. I think he likes having a break from cooking so now I need to start looking for more casserole type recipes....I think that's why it worked so well for me....no fuss, no muss.
