When I make meatloaf I don't really follow a recipe. I just kind of throw everything in. lol I put the meat in a bowl and then add two eggs, bread crumbs, diced onion, some spices and a little bit of ketchup. When it has about 10 minutes left to bake I spread ketchup over the top of it.

I make mine like this.....

1 or 2 lbs hamburger meat
1 box of Stove Top, chicken flavor, uncooked
1 can of Tomato Sauce
1 small onion, chopped
1 small bell pepper, chopped
1 egg
salt & pepper

Mix hamburger meat, stove top, onion, bell pepper, egg, salt & pepper and 1/2 can of tomato sauce in a large bowl with your hands. Place into a 9x13 pan and form into a loaf. Pour remaining tomato sauce along the top and sides and the loaf. Add a little bit of water to the sides of the loaf as well. Cover with foil and bake at 350 for 1 to 1 & 1/2 hours. I always check mine after one hour and then every 10 minutes after that until its done.

My whole family loves their meatloaf this way. I serve it with mashed potatoes, corn & peas mixed and brown and serve rolls. We usually eat off of this for 2 days. :)
