Beef roast in the crockpot, will add potatoes, carrots, onions later.

Have a chocolate cake in the oven too.

Making really easy tonight.
DS#2 will be going to Scout camp for 2 days, so he needs a big send off.

Gonna make ds some hot wings, fries and cantalope.

I've been trying to find something appatizing to do with salmon again :rolleyes: but think I'm going to go with a turkey sandwich,salad and cantalope. :)

I bought two of those buffalo chicken pizza's from pizza hut yesterday and we still have a whole one left so that will be supper for today. :)

Cream Cheese Chicken

4 pounds Chicken breasts, boneless/skinless-- ready to cook
2 tablespoons Butter or Margarine -- melted
1/2 teaspoon Black Pepper
1/2 teaspoon Salt
1 ounce Italian Salad Dressing Mix --low salt
1 can Condensed Cream of Chicken soup
8 ounces Cream Cheese -- cubed
1/2 cup Chicken Broth
1 large Onion -- chopped
2 tablespoons Chicken Broth -- to cook onion
2 cloves Garlic -- minced
1 can mushrooms


Brush chicken with butter and layer in crock pot with dry Italian seasoning mix sprinkled on each layer. Cover and cook on low for 6-7 hours. About 45 minutes before done, brown the onion in the chicken broth and then add the cream cheese, soup, salt & pepper and remaining chicken broth to the saucepan. Add the minced garlic amd mushrooms and stir all ingredients until smooth. Pour sauce mixture over chicken in crockpot and cook an additional 30-45 minutes. Remove chicken to platter and stir sauce before putting in gravy bowl.


Serve over pasta, potatoes, rice, or biscuits. Yummy.

Been running and visiting folks all day. Too pooped to fix fancy. Just fried myself 2 cheeseburgers and put them on sesame buns. The kids are gone till Sun. night.

Swanson Frozen Dinners were on sale for a buck each at the grocery store. Loaded up the freezer :) Everyone's having something different tonight.

Hey Kelly! I've been lurking more than posting....board was so frustratingly slow for awhile! Waiting for spring to get here, but you know IN...could be another freekin month or more!


For supper we all went to Ponderosa, I had sirloin tips w/ onions (no mushrooms!), cabbage, green beans, stuffed bell pepper, meatballs, salad and sugar free pudding!! :eek: I was stuffed! Could hardly drink a beer after eating all that food! (actually I brought about 1/2 of it home and just finished it off! mmmmm!!!)

colder than I woulda liked it to be weather-wise . . . . . so I made chicken noodle soup. Thought it'd be a good soup day and I just had chili not too long ago.
