we usually make mini tacos.

take white tortilla chips

brown hamburger in skillet

put hamburger on chips, top with shredded or sliced cheese

put in oven on 325 until cheese is melted, add a dab of taco sauce or salsa


They are easy and soooo good.

This is a great dip to use with tortilla chips

Hot mexican dip

1/2 lb. hamburger cooked and drained
1/2 lb. sausage cooked and drained
large container of velveta cheese cubed
1-2 cans rotel tomatoes with chilies

throw it all in a crock pot and heat till melted, keep hot on warm.

CRAB DIP

8 oz cream cheese
8 oz sour cream
1 package mrs. grass dry vegtable soup mix

mix together and spread out on plate, on top of this spread cocktail sauce to within an inch of edge, in the middle put 1 can drained crab meat. Serve with crackers.

for something on the sweet side:

CHOCOLATE CHIP CHEESE BALL

1 (8 ounce) package cream
cheese, softened
1/2 cup butter, softened
3/4 cup confectioners' sugar
2 tablespoons brown sugar
1/4 teaspoon vanilla extract
3/4 cup miniature semisweet
chocolate chips
3/4 cup finely chopped pecans


Directions
1 In a medium bowl, beat together cream cheese and butter
until smooth. Mix in confectioners' sugar, brown sugar and
vanilla. Stir in chocolate chips. Cover, and chill in the
refrigerator for 2 hours.
2 Shape chilled cream cheese mixture into a ball. Wrap
with plastic, and chill in the refrigerator for 1 hour.
3 Roll the cheese ball in finely chopped pecans before serving.

we serve these with the grahm cracker sticks. I also don't roll it in the nuts.

We usually do mini reubens..

1 loaf of cocktail rye or pumpernickle bread
1 lb. of corned beef
1 c. of saurkraut
1 lb. of swiss cheese ( cut to fit bread slices)
russian dressing or 1000 island dressing

lay out bread slices on cookie sheet (as may as will fit)
spread each slice of bread with dressing
layer corned beef, then saurkraut ( big spoonful), next swiss cheese
you can top with another slice of bread but I serve mine opened face(no top)

bake in 350 degree oven til cheese is melted and sandwich is heated through

dcut, that rotel dip is the best and I had crab dip for the first time on christmas day. except my dads girlfriend used just crab meat, cream cheese and cocktail sauce, served with wheatables and wheat thins.

I made the crab dip before, except i mix it all together and add a can of baby shrimp

I do, just make sure it doesn't look fatty....or you always can cook up a corned beef, lol, I am too lazy for that! :rolleyes:

Another easy one that my family loves...

Braunschweiger Dip

1 lb. Braunschweiger
2 heaping TBS.sour cream
2 TBS. sweet pickle relish
2 TBS. lemon juice
2 heaping TBS. chopped onion (I add a little more)

Mix well and chill...serve with any cracker or Ritz

My mom makes an awesome pizza dip. She spreads cream cheese in the bottom of a round pizza pan, adds salsa onto it (like the cream cheese is the crust and the salsa is the sauce) Then she sprinkles pizza cheese on the top and adds sliced olives onto the very top. It looks just like a pizza and it tastes AWESOME with tortilla chips. Its pretty cool looking. Also, you just can't beat good old nachos!

Wifey and I are doing an easy snack for New Years Eve. Pot stickers, egg rolls, and a bottle of rhubarb wine (Wasson Brothers of Oregon has the best). I hope everyone has a wonderful new year. :)

I have never heard of rhubarb wine...is it sweet or bitter? Is it a local thing? It does sound interesting though...and I hope you have a great year too!!

Apple Jelly Meatballs are real good and easy. It sounds gross, I know, but you brown your meatballs in a skillet or buy pre-made ones. Then you just melt a big jar or two small jars of apple jelly into the meatballs and simmer. they are so good. There is also the Lil smokie wraps, but that is time consuming. You wrap them in cresent roll pices and bake. they are so good but you can eat them faster than you canmake them. :D Also if you have a Fondue, you could make a cheese fondue and put pieces of bread and veggies out to dip into it.

We usually make several things, but my favorite are the mini hot dogs/sausages (we use hilshire farms). My hubby makes them, so I am not for sure how he does it but if you use concord grape jelly and heinz chili sauce and then simmer it all together it makes an awesome cocktail weenie :)

Fondue melt sounds like fun
with chocolate dip
and
fresh fruit like strawberries, apples, grapes,
pieces of pound cake or angel food cake,
or pretzels.
