HELP!!! I am looking for a basic homemade mac and cheese recipe. I did a search online but they all seem to call for different spices or processed cheese. I want to use sharp cheddar and colby/jack and i want it to have a cracker crumb topping. Any of you have recipes?n TIA

Basically when I make mine, I used cooked elbow macaroni, x-sharp cheese and milk. I put a layer of macaroni, cheese, macaroni and finish w/cheese. Then I pour milk over it just until you can see coming to the top. Bake it for approx 1 hr at 375. I don't put crackers on mine, I like the crunchy cheese on top.

heres my recipe
in a saucepan melt 3 tablespoons butter - 2 tablespoons flour then 2 cups milk
cook until it gets thick and bubbly then add 2 bricks of cheese - cut up into cubes.
after that is all melted pour over your cooked macaroni elbows (about 1 1/2 cups)
and bake for 40 minutes - you can put your bread crumbs on top before you bake - I put parmesean cheese on it before I bake it.
Oh bake at 350 for 40 minutes or until however brown you like the top.
I like it kinda burnt...lol

That is the way I usually make it BUT I have a new recipe that is the BEST ever! I made this last Friday. You do need a crock pot and 3 hours but it is YUMMY!!!!!

8 oz of cooked macaroni
3 cups of shredded cheese ( more if you like it extra cheesy)
2 beaten eggs
salt and pepper to taste
1 stick melted butter or margarine
2 large cans of evaporated milk (NOT CONDENSED!!!LOL)

Mix all together except for 1 cup of cheese and put in crock pot. Put last cup on top and cover. Cook on low for 3 hours. DO NOT REMOVE LID TILL TIME IS UP!!!

This is the only way I will make it any more.

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs


Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

A stovetop version, no crumb topping but still good.

1/2 pound elbow macaroni
4 tablespoons butter
2 eggs
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded


In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

Always make the homemade variety and it's so simple. Cook a 16 oz. box of elbows 'el dente'. Drain. Add 2 cans of Campbell's cheddar cheese soup. Add 2 soupcans of milk. Add a few shakes of Texas Pete. Add favorite spices. Simmer on stovetop for 30-60 mins. If I have it on hand I add a cup of shredded cheddar cheese. Yummy!! :)

Geesh.....I just wanted to use up some cheese I bought for a platter that did not get used up. Now with all these recipes I will have to buy MORE cheese!!!! LOL Thanks everyone....

Yummmmy! I love mac and cheese.... Hubby always asks if I plan to add mac to my cheese or just eat it alone, lol, so I guess that says it all. The creamier the better. When I was a kid we got that commodity government cheese...anyone familiar with those big ol 5 lb blocks? Those made the BEST mac and cheese, though I now prefer super duper sharp cheese. Are these recipes the creamy kind? So many recipes seem to have just a sprinkling of melted cheese on top and that's it. So disappointing! I like CHEESE and macaroni!!! :)

I just wanted to say that I tried the crockpot mac n cheese that badswife posted, and it's....

ABSOLUTELY DELICIOUS!!!!! Everybody loved it, even the hubby that doesn't like any foods that I like.
