View Full Version : Freezing Corn???

Hello all can anyone tell me how to freeze corn that is fresh off the stakc still in its ears!!!! Do I have to peel it off and clean or what??? Thank you.

For creamed corn -
cut the corn off the ears, scraping the cobbs to get all the juice.
Bring to boil in large, heavy pan, stirring constantly with potato masher. Boil 10 minutes. Watch carefully or will scorch. Cool in flat pan as quickly as possible. Put in freezer containers and freeze.

For corn on the cobb -
Use freshly picked corn
Strip, wash corn
Lay cobs on cookie sheet, freeze
Pack in freezer bags
Do not remove from freezer until water is boiling. Put promptly into water. When cooked put into water to cool.

I think you just shuck it and then store them in ziploc freezer bags. I'm not completely sure though as I've never frozen corn before.

Thank you I knew that I used to know how to do it but it has been years and now I remember that you do have to clean it and all thank you alot.

My mom cleans it. Boils it for only like 2 minutes and then freezes it.

How about baking corn? Can you do that? You always bake in when it's in a fozen dinner, and it tastes so good! Does anyone know how to bake corn on the cob???

I've never froze corn either, but my mom boils hers for a bit and then freezes is right away. good luck! :)

My mom puts hers straight into the freezer, husks and all. When she takes them out of the freezer the silk comes off really easily.

This is how my grandmother taught me: wash, boil for 3 min. put in ice water for 3 min , then zip lock bags.

Is that what they call blanching? When I was younger my parents used to do a lot of canning and freezing. I can remember when they would cut up the butternut squash they would boil it and then put it in cold water and I think they said they were blanching it. lol

Yeah it sure is. The boiling water kills any bacteria.You're suppose to put all vegetables in boiling water before freezing.
