*Sigh*, I have to work, too. Matter of fact, I'm here now, I'd be cooking and baking up a storm if I stayed home. Kinda like I do now on the weekends. :D

We didn't have what I was planning for last night, so it'll be 'sorta salisbury steak' tonight.

We had leftovers from yesterday's supper.
I made 2 big pans of 'Wedding Casserole'.
9 x 13" pan sprayed with Pam.
Basic recipe is this:
cooked pasta noodles (16 oz for each pan)
cooked chicken or turkey breast into bite sized pieces (freezer bag full)
mushrooms 2 cans, drained
mushroom soup + milk, water to make a sauce
onions, diced or dried onion flakes
parsley flakes
spices
and
small cubes of 1/2 bar of velveta cheese - evenly distributed into casserole. (Do not melt the cheese into the mushroom soup.)

Optional: sliced hardcooked eggs
pimentos
celery sliced
water chestnuts

Bake in the oven 350 for 30 to 45 Minutes.
Can be made day before with no precooking of the
pasta & add extra water.
Adults like it for the savory flavoring.
Kids like it - it's kind of like grown-up mac & cheese.
Always a hit.

Kids had a cpn for a free meal at the local Fazoli's Italian Restaurant for perfect attendance, so we had Italian tonight.
