We are having hamburgers and hotdogs with some seasoned fries and corn. May make some potato salad for the hubby, he is the only one that likes it.

We are having a Southern staple. Bean soup with rice and ham. I may make some fried bread to go with it too.

Oh yeah, I have frozen yogurt for dessert.

It's going to have to be chicken. Not sure how I'm going to fix it but it's definitely a chicken sort of night.

Guess I better trudge out to the deep freeze and find something. :p

Jolie's recipe:

Garden Beef and Rice

1 pound ground beef
1/2 cup chopped onion
1 garlic clove, minced
Oregano, salt and pepper to taste
1 (14-ounce) can chopped tomatoes
1-1/2 cups frozen lima beans
1 cup frozen corn
1 cup water
1-1/2 cups cooked rice
1 cup shredded Cheddar cheese

Brown the ground beef with onion and garlic in a large skillet, stirring until the ground beef is crumbly; drain. Season with oregano, salt and pepper. Stir in the tomatoes, lima beans, corn and water. Bring to a boil. Cook for 8 minutes or until the lima beans are tender. Add the rice. Cooked until heated through. Remove from the heat. Sprinkle with the cheese. Cover and let stand for 3 minutes or until the cheese melts.

SERVES: 6

((I have a lot of fresh tomatoes, so I substituted fresh tomatoes and fresh corn))

Hubby would live off shrimp fried rice if I let him. :p

Fortune cookies are good. I don't blame him for eating them all. I'd have done the same. :)
