View Full Version : I need a good recipe for Mustard Potato Salad.........

I do NOT care for mayonaise so the regular white potato salad is out but I do love a good mustard potato salad. Anyone have a recipe?

Red potato salad with grainy mustard dressing


1 1/2 lbs New red potatoes
1/2 cup Chopped scallions
1 cup Chopped celery
1/2 cup Sliced ripe olives

GRAINY MUSTARD DRESSING

1/2 cup Plain nonfat yogurt
3 tbsp Grainy mustard
1 tsp Chopped fresh dill
1/4 tsp Celery seed (optional)
1 tsp Chopped fresh basil, -OR-
1/4 tsp -Dried Basil
1/2 tsp Salt
Freshly grated black pepper
-- (to taste)

Place potatoes in a large saucepan with just enough water to cover.
Bring to a boil and cook until tender, about 8 to 15 minutes.
Drain and set aside until cool enough to handle.
Chop potatoes and mix with scallions, celery and olives.

To make dressing: in a small mixing bowl, whisk dressing ingredients.
Pour over salad and mix well.
Serve immediately or chill until serving.

That's an interesting recipe. Thanks Fug. Do I hafta put olives in it? Ew! LOL

Okay, okay, so I'm picky.

I'm afraid my recipe won't help much.

1 Publix
a few dollars

Get in car. Drive to Publix. Use money to buy potato salad from the deli. Drive car back home.

This is how I make mine....No exact measurements, I always make it by "feel". I cut up potatoes till my pan is abotu half full and then adjust everything else as needed.


Cut up 6-8 potatoes into pan and boil till done(almost mushy)
Hard boil two eggs, cool, peel and chop.

Drain potatoes and run cold water over them to stop them from cooking further. Let sit for 5 minutes or so. Drain cold water off.


Put cooked potatoes into large bowl, add chopped eggs, salt, pepper, chopped onions, sweet pickle relish, mayo(or salad dressing) and yellow salad mustard to taste.

You can cut this in half to make less.


CREAMY MUSTARD POTATO SALAD

5 lb. potatoes, cooked, peel and dice fine
1 dozen boiled eggs, chopped fine
3 c. celery, chopped fine
1 lg. onion, chopped fine
3 tsp. celery seed
Mix above and add dressing.

DRESSING:

3/4 to 1 qt. salad dressing
1 c. sugar
1/2 c. mustard
1/3 to 1/2 c. white vinegar

Hope it comes out! let us all know, Ive NEVER made potato salad before.... ( always figured thats what a deli is for?? ;) :D
