View Full Version : ISO graham cracker fruitcake recipe

A friend of mine is looking for a fruitcake recipe that uses graham crackers, maraschino cherries, and walnuts. She says that it is a baked cake.

Have checked my recipe books and cannot find anything even close...thought I would see if any of ya-ll might have it.

I have a graham cracker fruit cake recipe that uses graham crackers, maraschino cherries, and walnuts but its frozen instead of baked.


If she wants that recipe, I will be glad to post it.

Title: GRAHAM CRACKER FRUITCAKE
Categories: Cakes, Holiday
Yield: 1 Cake

1 1-pound box graham crackers
Save box
1 16-oz. jar maraschino
Cherries and juice
1 15-oz. box raisins
1 Pound chopped nuts
1 Pound marshmallows
1/2 Pound (2 sticks) melted
Butter
1 ts Ground nutmeg

Crumb crackers in processor. Halve cherries. Blend in very large bowl
crumbs, raisins, nuts, cherries (and juice), and nutmeg. Set aside. In a
large saucepan over low heat, melt marshmallows and butter. Add to crumb
mixture and blend well with hands. Wash hands. Line cracker box with foil.
Pack mixture into box and chill several hours until firm. To vary: use
green and red cherries and/or a small amount of candied fruit.

Mine is CLOSE to that one, but its my great great grandmothers recipe and you have to freeze it for a month. We always make it after Thanksgiving dinner and freeze it till Christmas.

FurgY, mine is the same as yours EXCEPT I use raisins instead of dates and I dont bake it.


My mom has always wanted to bake it though. I may send her this recipe.

Fruit cake?? Is it time for Christmas again?? Is the dreaded fruit cake out threatening unsuspecting citizens again??
