With hamburger on sale, now is the time to stock up. Here's some all-time favorite burger recipes.

Southwestern Burgers

Ingredients

• 2 pounds lean ground beef
• 1 (1.25-oz.) package ORTEGAฎ Taco Seasoning Mix
• 1/2 cup 4 cheese Mexican blend
• 8 hamburger buns


Directions

Garnish suggestion: ORTEGAฎ Salsa Prima


COMBINE beef and seasoning mix in large bowl. Shape into 8 balls. Make a well in center of each; place2 tablespoons cheese in each well. Enclose the well and flatted into patties.


GRILL or broil for 4 to 5 minutes on each side or until no longer pink in center. Serve on buns with salsa.

Serves 4

Ingredients

• 1/2 cup chopped green onion or finely chopped white onion
• 2 tablespoons fine dry bread crumbs
• 2 small red serrano peppers, seeded and finely chopped*
• 3 canneds chipotle peppers in adobe sauce, chopped
• 1/2 teaspoon salt
• 1 pound lean ground beef
• 8 1-inch-thick slices bread or 4 whole wheat hamburger buns, split**
• 1/2 cup roasted red pepper catsup, roasted garlic catsup, or other purchased flavored catsup (optional)
• 4 slices Pickled Green Tomatoes (recipe follows)
• 1 small sliced red onion (optional)
• 1 small red serrano peppers (optional)


Directions

1. In a large mixing bowl combine green onion or white onion, bread crumbs, serrano peppers, chipotle peppers, and salt. Add beef; mix well. Shape meat mixture into four 3/4-inch-thick patties.


2. Grill hamburger patties on the rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until done (160 degrees F.),*** turning once. Grill or toast bread or buns.** Serve burgers on grilled or toasted bread or buns with desired catsup, green tomato slices, red onion slices, and serrano peppers, if desired. Makes 4 servings.


Pickled Green Tomatoes: For pickling liquid, in a small saucepan combine 3/4 cup vinegar, 2/3 cup water, 2 tablespoons sugar, and 1/4 teaspoon salt. Bring to boiling; reduce heat and boil gently, uncovered, for 5 minutes.


Cut 1 pound green tomatoes into 1/4-inch-thick slices. In a large saucepan cook tomatoes and 1 teaspoon salt, covered, in a small amount of boiling water for 1 minute. Drain; rinse with cold water. Drain well; transfer to three hot, clean half-pint jars. In each jar, place 1 teaspoon dill seed and, if desired, 1 or 2 small serrano peppers, halved.* Pour hot pickling liquid over tomatoes, leaving a 1/4-inch head space. Seal and refrigerate overnight or up to 2 weeks. Makes 3 half-pint jars.


*Note: Hot peppers contain volatile oils that can burn eyes, lips, and sensitive skin. Please wear plastic gloves while working with peppers and be sure to wash your hands thoroughly afterward.


**Note: To grill bread or buns brush lightly with olive oil or margarine. Grill directly over medium coals for 30 seconds to 1 minute or until just toasted, turning once.


***Note:An instant-read meat thermometer ensures perfectly cooked burgers (patties). The internal color of the burger is not a reliable doneness indicator. A beef or pork burger cooked to 160 degrees F, regardless of color, is safe. If using a digital instant-read thermometer, insert the tip of the thermometer into the food at least 1/8 of an inch for 10 seconds. If using a dial instant-read thermometer, insert the thermometer through the side of the burger (patty) to a depth of 2 to 3 inches to get an accurate reading.

Serves 6

Ingredients
• 1 1/2 cups soft bread crumbs
• 1/4 cup chopped onion
• 1/4 cup water
• 2 tablespoons sugar
• 1 tablespoon soy sauce
• 1 clove garlic, minced
• 1/8 teaspoon ground ginger
• 1 1/2 pounds lean ground beef
• 6 hamburger buns, split and toasted
• 1 small sliced cucumbers (optional)
• 4 lettuce leaves (optional)


Directions

1. Stir together the soft bread crumbs, onion, water, sugar, soy sauce, garlic, and ground ginger in a large mixing bowl. Add the ground beef and mix well. Shape the meat mixture into six 3/4-inch-thick patties.


2. For a charcoal grill, place patties on the grill rack directly over medium coals. Grill, uncovered, for 15 to 18 minutes or until an instant-read thermometer inserted into the side of a patty registers 160 degrees F, turning once.


3. For a gas grill, preheat grill. Reduce heat to medium. Place patties on the grill rack; cover and grill as above.


4. Serve burgers in buns topped, if desired, with sliced cucumbers and lettuce. Makes 6 servings.


Test Kitchen Tip: When grilling, to test for medium heat, you should be able to hold your hand over the heat at the height the food will cook for 4 seconds before having to pull your hand away.

Serves 6 Can be broiled or grilled.

Ingredients

• 1 large beaten egg
• 1/4 cup fine dry bread crumbs
• 1 8-ounce can pizza sauce
• 1/2 teaspoon dried basil or oregano, crushed
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 1 pound lean ground beef
• 2 ounces pepperoni, finely chopped
• 6 hamburger buns, split and toasted
• 1/3 cup shredded mozzarella cheese


Directions

1. In a medium mixing bowl combine egg, bread crumbs, 2 tablespoons of the pizza sauce, basil or oregano, salt, and pepper. Add ground beef and pepperoni; mix well. Shape meat mixture into six 3/4-inch-thick patties.


2. Grill burgers directly over medium coals for 14 to 18 minutes or until center reaches 160 degrees F, turning once halfway through grilling.


3. Meanwhile, in a small saucepan heat the remaining pizza sauce. Place burgers on the bottom halves of the buns. Spoon some of the remaining pizza sauce over the burgers. Sprinkle burgers with mozzarella cheese. Top with remaining bun halves. Pass any remaining pizza sauce. Makes 6 servings.

Ingredients

• 1 large beaten egg
• 1/4 cup fine dry bread crumbs
• 6 slices crisp-cooked bacon, crumbled
• 4 - 6 fresh serrano or 2 to 3 jalapeno peppers, seeded and finely chopped (3 tablespoons)*
• 2 tablespoons milk
• 1 pound lean ground beef
• 1 fresh Anaheim or mild green chili pepper, seeded and cut into rings
• 1 small onion, thinly sliced and separated into rings
• 2 tablespoons margarine or butter
• 4 lettuce leaves
• 4 kaiser rolls or hamburger buns, split and toasted


Directions

1. In a large mixing bowl stir together egg, bread crumbs, bacon, serrano or jalapeno peppers, and milk. Add ground beef and mix well. Shape meat into four 3/4-inch-thick patties.


2. Grill patties, on an uncovered grill, directly over medium coals for 15 to 18 minutes or until an instant-read thermometer inserted in side of patty registers 160 degrees F, turning once.


3. Meanwhile, in a small saucepan or skillet cook the Anaheim or mild green chili pepper and onion in margarine or butter about 10 minutes or until onion is tender. Serve burgers on lettuce-lined buns. Top burgers with pepper-onion mixture. Makes 4 servings.


*Note: Because hot chili peppers contain volatile oils that can burn your eyes, lips, and skin, avoid direct contact with them as much as possible. When working with chili peppers, cover your hands with plastic bags (or wear plastic or rubber gloves). Be sure to wash your hands well with soap and water before touching your eyes or face.

Ingredients

• 1 8-1/4-ounce can crushed pineapple, drained
• 1/2 cup chopped red or green sweet pepper
• 1/2 cup sliced green onion
• 2 tablespoons snipped fresh cilantro or parsley
• 2 cloves garlic, minced
• 1 small jalapeno or serrano pepper, seeded and finely chopped*
• 1 large egg
• 1/4 cup fine dry bread crumbs
• 1 teaspoon dried basil, crushed
• 1/2 teaspoon ground sage
• 1/2 teaspoon seasoned salt
• 1/8 teaspoon pepper
• 1 pound uncooked ground chicken or turkey


Directions

1. Preheat grill. For salsa, in a medium bowl combine crushed pineapple, sweet pepper, half of the green onion, the cilantro or parsley, garlic, and jalapeno or serrano pepper. Cover; chill until serving time.


2. In another medium bowl combine the egg, bread crumbs, remaining onion, basil, sage, seasoned salt, and pepper. Add ground chicken or turkey; mix well. Shape into four 3/4-inch-thick patties. Grill patties on the grill rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until juices run clear and an instant-read thermometer inserted in side of burger registers 165 degrees F, turning halfway through grilling. (Or, preheat broiler. Broil 4 to 5 inches from heat on an unheated rack of broiler pan for 10 to 12 minutes.) Serve burgers with salsa. Makes 4 servings.


*Note: Because hot peppers contain oils that can burn your eyes, lips, and skin, protect yourself when working with peppers by wearing plastic gloves or bags. Be sure to wash your hands thoroughly before touching your eyes or face.


Make-Ahead Tip: Prepare salsa; cover and chill up to 8 hours.
