If you have boneless chicken you could make chicken & rice tacos.
Cut chicken into small strips or cubes, brown it in a little bit of oil. Add 2 cups of water, taco seasoning mix, 2 cups of minute rice and a jar of salsa. Cover and cook for 5 minutes. :)
I use flour shells and just add taco cheese and lettuce to them. They are so good and it makes a big pan full. :)

In a large skillet pour one cup of instant uncooked rice. Place 4-5 chicken breasts on top. Then poor a jar of Salsa over all of it. Let cook for 20-30 minutes or until chicken is done. Turn stove off and sprinkle mozzarella cheese on top of chicken. Replace lid and allow cheese to melt. Very Delicous!!

Brown the chicken, (no oil) then add 1 can of cream of mushroom soup, and 1/2 can of water. Simmer 30 minutes (maybe a bit longer depending on the size of the chicken breast) and serve with mashed potatoes or biscuits :)
*this one is one of my kids' favs!!!*

Take alomunion (sp?) foil put chicken breast and your favorite veggies (I like potatoes, onion, pepper rings) and cover in italian dressing wrap the chicken up in the foil like a packet and bake for 30 mins or until all is done. It is great and little clean up just throw the foil away.:)

Flatten chicken breasts and put a slice of swiss and a slice of deli ham on top of it. Roll and secure with a toothpick. Dip in egg and milk mixture and roll in seasoned bread crumbs. Cook at 350 for about 30 minutes or until done. These are great. It is chicken cordon bleu. If you like bleu cheese you can find a recipe for the sauce. we don't like the sauce so I just make them like this and we eat with ranch dressing. Very, very good!

I used to do this all the time when I was feeling lazy. Take a bottle of Italian dressing and pour it in a bowl. Put the chicken in the bowl and cover it. Put it in the fridge for about an hour (longer if you want, won't hurt anything). Then when you are ready to cook it, cook it on the stove top in a skillet with a little bit of oil. Or you could also cook it on a Geroge Forman grill or a regular grill. It's real easy and it tastes really good.
