Well we were going to go over to IL's for easter but they dont have any money:rolleyes: and are going over to SIL's (the one that just got out of hospital) and are eating over there. SIL's dh is going to cook:eek: so we are staying home for easter dinner lol (he is the one that will put pork chops in the oven for an hour and will put chicken breasts in the crock pot with nothing but a little water and cook all day.:eek: talk about good;) lol)
Anyway I am not sure what to make for the meat. I did easter dinner for us last year and made a turkey. This year I have a couple of rib roasts in the freezer and was thinking of making that for easter.
What do you guys think will a rib roast be ok for easter dinner? or should I go out and buy a ham lol

do whatever YOU want to do, if you want rib roast by all means have rib roast. kinda a new easter thing. having the same thing year after year gets alittle boring anyhoo.

thanks guys, I was thinking that seeing how I have these rib roasts anyway I might as well use them lol
Now I just have to find a good recipe for it lol

We're having steak and prawns ... nobody wants turkey or ham!
We've also had Prime Rib for Christmas ... an English tradition, so I'd say do what you like ... Rib Roast sounds GREAT!!!

I am having nothing
My mom and dad went to Michigan and dh has to work, so its just me and Savannah. So she will have some baby food, and me nothing. I am kinda bummed out about this. I was looking forward to a good meal this year!:(

i think you should just cook what you like. we have a potluck at my moms every year and we all bring whatever. i am making the ham again and my mom is making brisket. but, i have very lazy sil's and they usually bring rolls or store bought pies and take a buttload of the good stuff home with them when they leave:rolleyes: my hubby says my brother is the only person he knows who can show up with walmart brand soada and leave with dr pepper!lol

im not a yankee tho. most people i know have ham or turkey.......it's just an older tradition is what i've understood.

i like lamb and would fix it, but dahubby doesn't like it. havent had lamb since before i was married.

I've never heard of anything but ham for Easter. This year we're having whatever I feel like cooking since Kevin's gone.

lamb is the traditional easter fare due to the jewish roots of the Christian holiday from what I understand. jesus is referred to as the Lamb of God and lambs were the sacrifice for sin offerings; easter has the religious signifigance for Christians because of this.
The lamb reference here is what i have been told is the reason for having lamb on easter.
BUT.....eat what you want and whatever works for you and your family!

We are having ham. Same as every year. I like lamb but no one else will eat it so I don't get to.
The one thing I am waiting for is pickled beets and eggs. My family is Penn. Dutch and it is one of their traditions.

We usually have ham at Easter time, but as long as you are with your family and having a good time, you could eat at McDonalds and it wouldn't matter. Have a great Easter and whatever you make enjoy it.

We're going to a local restaurant(Lacey's)for a big ol' country buffet...turkey & dressing,ham,roast beef,ribs,fried chicken,mashed taters,gravy,corn,white beans,green beans,baby carrots,brussell sprouts,macaroni & cheese,turnip greens,rolls,cornbread,salad bar,and a huge dessert table with over 20 kinds of homemade cakes,pies,and cobblers.OH YEEEEAH!!!:D

I say rib roast souinds great, I don't like ham that well anyway.
4-5 pound Coleman Natural Prime Rib Roast
1/3 cup olive oil
2 tablespoons lemon juice
3 tablespoons rosemary leaves
4 garlic cloves, minced
1 teaspoon black pepper
Preparation
Place the roast in a shallow roasting pan and allow it to "rest" out of the refrigerator for 30 minutes. Preheat oven to 450 degrees F. Combine the remaining ingredients. Rub the meat surface with olive oil mixture. Place the roast in a preheated oven for 15 minutes or until the roast begins to brown. This will sear the roast and seal the juices. Reduce the heat to 350 degrees F and continue cooking for 15-18 minutes per pound for a boneless roast or 26-32 minutes per pound for a bone-in roast. A meat thermometer is desirable to test the degree of doneness. Remove the roast when the thermometer reads 5 degrees below the desired doneness.
Remove from the oven and allow meat to rest for 10 minutes before carving.
Makes: approximately 8-12 six-ounce cooked portions
Prepartion Time: 40 minutes
Cooking Time: Bone-In Roast: 2 hours; Boneless Roast: 1 1/4 hours

Growing up we always had ham on Easter because it was easy. We'd go to my grandparent's for the traditional egg hunt and my mother wanted something easy when we got home (she pre-cooked the ham). When we got older and would leave my grandmother's house earlier, Mother would roast a leg of lamb on Easter. She said that's what her mother always fixed for Easter. She thought it was an Italian, or at least Mediterranean thing. I know that lamb features quite prominently in Greek culture too.
I don't know what we're going to have yet. It depends on whether SS is here or not. I am going to bake a cheesecake for dessert though.

I cant believe this but dh told me yesterday he wants ham lol so I went and bought him a little ham, and I am still making the rib roast lol my granny is coming up for easter again this year and I know she will like the rib roast.
