I started a Christmas cookie thread here a couple weeks ago. It's hiding somewhere.

My DH has asked me to make cookies for everyone at his work so I'm looking for ideas, types of cookies, recipes, anything. Last year I made sugar cookies and just used cookie cutters to make christmas shapes but I want to do something different but easy this year. We've been so busy lately so I don't want anything that is going to take all day to make. Should I just go with chocolate chip? Any ideas will be helpful. Thanks

EGGNOG SNICKERDOODLES
INGREDIENTS:
2 3/4 c All-purpose flour
2 t Cream of tartar
1 1/2 c Sugar
1 t Baking soda
1 c Butter-softened
1/4 t Salt
2 Eggs
1/2 t Brandy extract
1/2 t Rum extract
1/4 c Sugar or colored sugar
1 t Nutmeg
Preheat oven to 400 degrees. In a small mixer bowl combine flour, soda, salt, mix. In a 3 qt. Mixer bowl cream butter, 1 ½ cup sugar then add cream of tarter, eggs & extracts. At low speed, add flour mixture scraping sides of bowl often, until well mixed (2 to 4 min.). In small bowl mix ¼ cup sugar and nutmeg, set aside. Shape dough by rounded teaspoons into 1" balls; roll in sugar mixture.
Place 2" apart onto ungreased cookie sheets. Bake for 8 to 10 min. or until edges are lightly browned.
I made these last year and they were a great hit. Made them again the other day.
You may need to make more of the sugar/nutmeg mixture as I sometimes don't have enough.

Here's my favorite. I invented this recipe almost 20 years ago and everyone I have served them to thinks they are terrific. They are very easy to make and stay moist for months! :D That is, if they last that long.
Spicy Molasses Cookies
1 cup Butter (not margarine)
1/2 cup sugar
1/2 cup brown sugar packed (light or dark)
1/2 teaspoon cloves
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1 egg (AA large)
1/2 cup molasses (I use Grandma's)
3 cups flour
1/4 teaspoon salt
1/4 teaspoon baking soda
Mix butter, sugars and spices. Add egg and mix again. Add Molasses and mix very well. Combine flour, soda and salt. Mix into other batter. Roll out on floured cutting board about 1/3 inch thick. Use cookie cutters of any shape. Sprinkle with colored sugar. Bake at 350 degrees for about 8 minutes or until lightly browned on the bottom. Let cool and enjoy.
Colored sugar. Either use store bought, regular sugar or make your own by adding 5-8 drops food coloring to 1/2 cup sugar and mixing completely.

Use any recipe for simple drop sugar cookies, but add like a half cup of crushed up candy canes to the dough. Very pretty, taste good and easy too!

OOOH, sounds VERY much like my husband's grandmother's molasses cookies (called them Dutch Cakes) I'll dig up the recipe! I make a double batch, freeze half (without icing) and they are even better the next year because all the spices blend! Moist and chewy and nummy cookies!

i make some that are easy as pie.
ya just take regular peanut butter cookies and before u roll them in a ball u take a miniture snickers and roll it into the middle of the ball. place it on the sheet and bake normal time and temp.dont mush down the ball!!! then i take melted chocolate and lightly drizzle over each chocolate.they are soooooooo yum yum for michelles tum tum!!! a hit guarenteed!!!!!!!!!!!!!!!!!!!!!!!!!!

Dutch Cakes (Gramma's molasses cookies)
((dahubby's gramma was born 1885-87. This recipe was her mother's. So I'm the 4th generation making these--that I know of!))
3 cups good quality molasses (NOT Brer Rabbit!)
1 1/2 pounds raisins, chopped
2 cups lard (NOT shortening or oleo...LARD)
1 cup sugar
1-2 eggs, beaten
1 1/2 tbsp. baking soda
1 teas cinnamon
1 teas nutmeg
1 teas cloves
1 teas ginger
2 cups pecans, chopped
1/4 cup hot water
5 pounds flour
Heat molasses & lard in a large pot on very low heat until it melts. Then add sugar, 1-2 beaten eggs, spices, water and baking soda. Stir with a heavy duty wooden spoon (will bog down a mixer) until mixed well. Add nuts and raisins. Mix well. Add flour until dough is stiff.
Roll out (thin, 1/8" or so) on well floured board (or countertop), adding only enough flour to roll easily. You can use cookie cutters, but I just use one of those pie pastry cutter things and cut into squares about 2" or so. Bake at 350 til done (I have no idea how long, try 8-10) Cool. Icen with any type of powder sugar icing. (couple tablespoons oleo, little milk, teas vanilla & powder sugar to desired consistency)
