Anyone have a good stuffed green pepper recipe?
I am looking for a good easy recipe. It is my sons birthday tomorrow and he said he would like to try this and I have never made them. I could do a search but there are so many recipes out there. I thought maybe you had a favorite way to do it..

I make 'meatloaf' mix and stuff it into a cleaned out pepper with it's top cut off. Stand it in a pan, somewhat cover with sauce and bake. (I've also done it with peppers halved and cleaned out too.)
I usually 'wing' cooking so I can't give exacts and I often change the ingredients around.
In your 'meatloaf' mix, you can use some cooked rice as well instead of bread.

I use great value brand of chicken flavored rice, mix with 1.5 C of mozzarella cheese. Cook the rice and after it is cooked, add the cheese and stir together. While rice is cooking, wash peppers, cut off top and scoop out seed pod. Place on baking sheet, add rice mixture to each pepper, and top with a little extra cheese. Broil until cheese is melted and toasty. quick and easy!

That's how I make mine too. I do parboil my green peppers before I stuff them. I sometimes use rice but usually bread crumbs.
