Help Pickle Beets
Im going to try to do up a batch of beets and dont no what kind of vinegar Im suppose to use...Does anyone know? TY

I used to use apple cider vinegar, it seemed like it made them a little less 'vinegar-y' lol!

In the blue book, one recipe just calls for vinegar. The second one (Spicy Pickled Beets) calls for cider vinegar. My "Stocking Up" book, which is great, also just calls for vinegar. I'd say white vinegar, unless it specifically states cider vinegar. Sorry, hope this helps.

It depends on what recipe you are useing. This is the one I use.
3 quarts beets
2 cups sugar
2 cinnamon sticks
1 tablespoon whole allspice
1 1/2 teaspoon salt (canning)
3 1/2 cup vinegar (white)
1 1/2 cup water.
Combine all ingredients except beets in a large saucepot. Bring mixure to a boil, reduce heat. Simmer 15 minutes. Remove cinnamon sticks. Pack beets in hot jars leaving 1/4 inch headspace. Ladle hot liquid over beets. Remove air bubbles.
process pints and quarts 30 minutes in boiling water canner.
makes about 6 pints or 3 quarts.

3 quarts beets, pealed and quartered
2 cups sugar
2 cinnamon sticks
1 tablespoon whole allspice
1 cinnamon stick
1 1/2 teaspoon canning salt
3 1/2 cup cider vinegar
1 1/2 cup water.
