    Branching off from the Garden thread..Do you can?

    I was wondering if you guys do your canning, to stock pile some of that summer produce? If so what? And does anyone pickle jalapenoes without oil? If so would you share your recipe?

    I make picalilli, bread and butter pickles, zucchini relish, dill pickles (although I have been less then thrilled with them the last couple times), sweet and spicy pickles, mustard pickles, canned tomatoes, rasberry jam, blackberry jam, blueberry jam, strawberry jam, canned beets, pickled beets, dilly beans, can green beans, canned carrots, plus other types of pickles.

    No I do not can .. my grandma did though when my grandparents had their garden. I even remember my mom doing it when I was really little.

    I can all year long.

    During the summer I can from the garden, tomatoes, salsa, bread and butter pickles, dill pickles, pickle relish, corn (also freeze some), green beans (also freeze some), jams, and jellies.

    And throughout the year, I can things like chili, beef stew, veggie soup, potato soup, chicken noodle soup, sloppy joes. On any of these when we start running low and I make it fresh I will make a 20 quart kettle full, we'll eat it that night and then I can up the rest of it that evening. That way we always have a supply of it on hand.

    So at any given time except for buying a few staple items like Milk, bread, butter, we could actually live on what we have canned up or in the freezer for at least 4 months and not run out of food.

    And of course we raise chickens so we always have plenty of eggs on hand also.

    We do........whole tomatoes, tomatoe juice, dill pickles, green tomatoes, green beans, pickle corn, peppers, peaches...gosh I think I am forgetting some not sure right now!

    I used to can when we lived in TN and I could have a big garden, but the only thing Ive done since moving to to AZ is make and can jam.

    Wow I have never canned my own soups and stuff, I will have to look into that since I cannot stand store bought canned soup.

    How do you eat canned green tomatoes?

    Growing up, we canned and froze almost every veg in the garden.

    I could probably still can tomatoes, peaches
    and freeze corn, greenbeans, and applesauce.

    I only did pickles one time. I don't eat pickles, but my boys do.

    What is the difference in canning chicken noodle soup and spaghetti sauce w/ meat?

    Please advise.
