Livermush is what is a North Carolina thing from what I read looking to see what it was. And no I wouldn't eat that either. But I do eat grits and like them.
I understood.... you can get liver mush in SC, and LA, though I've never noticed it here in GA.

Re: what did your kids eat for breakfast today..
OK, I thought maybe you had thought I was referring to grits. As far as livermush I will take your word on it you can get it other places. I have never seen or heard of it until it was posted on here today. I was saying it was a NC thing because when I searched for it everything refers to it being found mostly in NC. But that's not to say you can't find it in other places.

You have got to try them one day. Where in the south are you? I was born in GA and lived in AL. I was close to the GA/AL state line.
A sprinkle of sharp cheddar cheese doesn't hurt them any either ;D

I love grits like any good southerner, so does DD, but DH was also born and raised in the south and he hates them.
eeyore329, I think souse is the same thing I remember my grandparents calling head cheese......I'm not eating that either!
I'm a picky eater and I love grits. Maybe it's a guy thing to not like grits. Cause Josh didn't like 'em when I made him try them either. Or maybe Josh and Daddy are just weird ;D
As far as anything that is called head cheese, I refuse to get close enough to so much as catch a whiff of it.

LOL One of these days I will have to buy some and try em. I just hate to spend money on something and not know if I will like it. Yeah yeah I know, how will I know I won't like it unless I try it. I wouldn't mind trying it.....if someone else would pay for it
I live in northwest MS, about 15 min from the MS/TN state line and Memphis.

Yep, have heard of fat back. I have never bought it or used it myself. I don't even know if you can get it around here. I know growing up it was thrown in greens or beans as flavoring. If I want flavoring I usually use ham or buy ham hocks for flavoring.
I don't think I will try the livermush/puddin. Doesn't sound good to me at all. Here in PA scrapple is what alot of people eat. I don't know if it is sold in other states or not. I have heard the homemade is better than the stuff you buy in the stores it doesn't have all the yucky stuff in it like the store bought stuff. It is sliced and fried. I won't try it either.

Re: what did your kids eat for breakfast today..
I had to search to give a explanation. I just knew it had parts of meat in it I didn't care to eat and it doesn't look good to me.

Scrapple
What's scrapple? According to Wikipedia, it's
a cornmeal pudding in which the cornmeal, perhaps with the addition of buckwheat, is simmered with pork scraps and trimmings, then cooled and hardened into a loaf.
Scrapple is one of those farm foods invented to use those parts of slaughtered food animals which were not suitable to be served on their own, in the same manner as sausages, or Jewish kishkes. Scrapple typically contains the meaty parts of hog heads, hearts, some liver, and other scraps. The proportion and spicing is very much a matter of the region, family, and the cook's taste.
Commercial scrapple will often contain these traditional ingredients, with a distinctive flavor to each brand, though homemade recipes often specify more genteel ingredients, and consequently a blander taste.
Scrapple is typically cut into thin slices, fried until the outsides form a crust, and eaten at breakfast in a similar manner to bacon or sausage. It may be eaten as is, or served with maple syrup, apple butter, ketchup, mustard, and/or butter.

Re: what did your kids eat for breakfast today..
I don't think I'd try Scrapple either.
I've cooked with fat back, usually in greens or beans for DH or my brothers. I've never eaten it cooked in anything. I remember my mom frying fat back when I was a kid, my little brother loved it.
Since we're discussing regional 'delicacies' has anyone else ever had tomatoe gravy?? My grandma in Louisiana used to make it for breakfast with biscuits. My brothers still ask my mom to make when they see her.
