Week 3 cooking club
OK..post your recipies, we'll vote tomorrow. Anyone who wants to join, please go ahead and do so.
I think this week we'll be doing brunch ideas for Mrs. John. Thanks!
Brunch Enchiladas
8 hard-cooked eggs, chopped
1 can (8 1/2 oz.) cream-style corn
2/3 cup shredded cheddar cheese
1 can (4 oz.) chopped green chilies, undrained
2 tsp. taco seasoning mix
1/4 tsp. salt
8 corn tortillas, warmed
1 bottle (8 oz.) mild taco sauce
Sour cream, optional
Combine the first six ingredients; spoon 1/2 cup down the center of each tortilla. Roll up tightly. Place, seam side down, in a greased 13x9 baking dish. Top with taco sauce. Bake, uncovered, at 350* for 15 minutes or until heated through. Serve with sour cream if desired.
Ham and Cheese Strata
12 slices white bread, crusts removed
1 lb. fully cooked ham, diced
2 cups shredded cheddar cheese
6 eggs
3 cups milk
2 tsp. worchestire sauce
1 tsp. ground mustard
1/2 tsp. salt
1/4 tsp. pepper
Dash cayenne pepper
1/4 cup minced onion
1/4 cup minced green pepper
1/4 cup butter or margarine, melted
1 cup crushed cornflakes
Arrange six slices of bread in the bottom of a greased 13x9 baking dish. Top with ham and cheese. Cover with remaining bread. In a bowl, beat eggs, milk, worchestire sauce, mustard, salt, pepper, and cayenne. Stir in onion and green pepper; pour over all. Cover and refrigerate overnight. Remove from the refrigerator 30 min. before baking. Pour butter over bread; sprinkle with cornflakes. Bake, uncovered, at 350* for 50-60 minutes, or until a knife inserted near the center comes out clean. Let stand 10 mins. before serving.
Breakfast Pizza
1 lb. regular, sage, or hot bulk pork sausage
1-1/4 cups frozen shredded hash brown potatoes, thawed
1 cup shredded cheddar cheese
5 eggs
1/2 cup milk
1/4 tsp. salt
1/8 tsp. pepper
Grated Parmesan cheese
Paprika, optional
In a skillet, brown sausage; drain. Spoon into an ungreased 10 in. pie pan. Top with potatoes and cheddar cheese. In a bowl, beat eggs, milk, salt, and pepper; pour over cheese. Sprinkle with parmesan cheese and paprika if desired. Bake, uncovered, at 375* for 30-35 minutes or until golden brown.
Baked Breakfast Burritos
6-8 bacon strips
8 fresh mushrooms, sliced
6 green onions, sliced
1/3 cup chopped green pepper
1 garlic clove, minced
8 eggs
1/4 cup sour cream
3/4 cup shredded cheddar or Monterey Jack cheese, divided
3 TBS. enchilada or taco sauce
1 TBS. butter or margarine
4 large flour tortillas (9 in.)
Sour cream and additional enchilada or taco sauce, optional
In a skillet, cook bacon until crisp; remove to paper towel to drain. Reserve 1 TBS. of drippings. Saute mushrooms, onions, green pepper and garlic in drippings until tender; set aside and keep warm. In a bowl, beat eggs and sour cream. Stir in 1/4 cup cheese and enchilada sauce. In a skillet, melt butter; add egg mixture. Cook over low heat, stirring occasionally until eggs are set. Remove from heat. Crumble the bacon; add to eggs with mushroom mixture. Spoon down center of tortillas; roll up. Place, seam side down, in an 11x7x2 baking dish. Sprinkle with remaining cheese. Bake at 350* for 5 mins. or until cheese melts. Serve with sour cream and enchilada sauce if desired.

OK..that's fine, just please be sure to vote on whatever. I was just trying to give her other options. To be fair, I could edit and start a new thread for her, and just leave one for the cooking club. LMK.

it doesn't matter to me. If everyone else is happy with this, that's fine.. I don't eat many breakfast foods so i could just skip out anyway this week.  No problems!

Uh, oh--I think I'm causing a catfight, lol.
I have 2 that I want to share--but I'll just post one
Spicy Sausage Skillet Breakfast
--2 c. rice (cooked according to package directions)
--1 pound breakfast sausage
--1/4 c. chopped onion
--1 can (10 ounce) tomatoes with green chilis, undrained
--1 T chili powder
--1 1/2 c. shredded Monterey Jack cheese
Crumble sausage in large skillet. Cook until lightly browned, stirring occasionally to break up. Drain. Add onion. Cook until tender. Stir in tomatoes, chili powder and rice. Simmer 2 minutes. Sprinkle with cheese. Take antacids

Brunch Pie
1 can of Pillsbury crescent rolls
package of bacon
6 eggs
medium onion
2 good sized potatoes
Monterey Jack cheese
Roll crescent dough in a pie pan and push together seams. Cook bacon until crisp, set aside. Chop onions and potatoes into diced pieces and sautee until brown. Cook the eggs scrambled style. Once all ingredients are finished, layer into pie pan. I first layer the eggs, then potato/onions, bacon (crumbled), then cheese. Place in an oven for about 15 minutes at 350. Basically all you are doing at this poing is cooking the crescent dough and melting the cheese. Serve with wheat toast and strawberry jam. Enjoy!

M-K I love strata, I make mine with crumbled sausage, mushrooms & spinach with cheddar on top! great recipe!

i personally aint a breakfast person either but this is what my great grandpa used to eat all the time, it was his fav!!
a pack of refrigerated biscuits, whichever you like-bake em as directed.
either take cooked sausage or ground beef and mix it with white country gravy, and pour over biscuits.
i personally like taking the gravy mixture and pour some on a baked tato or steamed ones.

Brunch Quiche
(serves 6)
1pkg elbow macaroni
8 slices bacon chopped
2c shredded American cheese
2c shredded Monterey Jack cheese
2c soft bread cubes
1md Onion, finely chopped
1sm Green bell pepper, finely chopped
4 Eggs, separated
2c Milk
1t Salt
6-8 drops bottled Tabasco sauce
salsa (optional)
Prepare elbow macaroni according to package directions; drain. In medium skillet, cook bacon until crisp; drain. In large bowl, combine macaroni,bacon, cheeses, bread cubes, onion and green pepper.
In medium bowl, beat together egg yolks, milk, salt and hot pepper sauce. Add to macaroni mixture; mix well. In large bowl, beat egg whites until stiff. Fold into macaroni mixture. Put into buttered 12 inch quiche dish or a 13 x 9 inch baking dish. Place a shallow baking dish with 1-2 inches water on lowest rack of a 325 degree oven. Place quiche on center rack. Bake until set and knife inserted in center comes out clean, about 1 hour. Let stand 5 minutes before cutting.
Garnish as desired. Serve with salsa. Refrigerate leftovers.
