Carnations ARE edible (I've eaten them for years) but try to eat only those that haven't been dyed because the dye makes them bitter tasting.
Some more flowers that are edible: roses, peonies, and dandelions.
Make sure the flowers you get (either from a florist or from your yard) don't have any kind of pesticide on them.
Roses have a roselike taste and are full of vitamin C. Rose hips can be candied or used to make rosehip jelly. They taste like chewable vitamin C tablets.
Peonies have a delicate taste and are great for eating sugared.
Dandelions are bitter unless you use only the small flower buds that are barely open. Dandelions were brought over from Europe because the greens and flowers have been used as a tonic for centuries (the plant is full of vitamins) and the ground root has been a substitute for coffee.
