    Here’s all you do…

    Ingredients
    •1 box cake mix, any flavor
    •1 can room temperature soda, any flavor

    How to Make
    1. Preheat your oven to 350°
    2. Line muffin pan with liners.
    3. In a medium bowl combine your soda and cake mix, stirring with a whisk until most of the lumps are gone.
    4. Fill each liner 1/2-2/3 full of batter.
    5. Bake for 18-20 minutes until cupcakes are springy and toothpicks comes out clean.
    6. Let cool completely before frosting.

    Notes : You can use any flavor combination you would like. Coke or Dr. Pepper would be great in a chocolate cake mix. Orange Soda, Mountain Dew, Sprite, Root Beer would all be fun to try too.

    Cajun Shrimp and Quinoa Casserole



    Ingredients:
    ¾ lb large shrimp, peeled and deveined
    4 medium tomatoes, cut into chunks
    1 jalapeno, seeded and chopped
    ½ C chopped sweet onion
    2 cloves of garlic, minced
    1 tbsp tomato paste
    3 tbsp olive oil
    2½ tsp cajun seasoning
    Salt and pepper to taste
    2½ C cooked quinoa
    1/4 C shredded fontina cheese
    Fresh cilantro for garnish

    Directions:
    - Toss the shrimp and 1 tsp Cajun seasoning together, set aside.
    - Toss the tomatoes with 1 tbsp olive oil and 1 tsp Cajun seasoning, set aside.
    - Heat 1 tbsp olive oil over medium heat in a cast iron skillet.
    - Cook the shrimp until opaque, about 2-3 minutes per side. Remove from the pan and set aside.
    - Add the remaining 1 tbsp of olive oil to the pan along with the onion, jalapeno and garlic.
    - Cook until the onion and jalapeno are tender, stirring often.
    - Mix in the quinoa, tomato paste, ½ tsp Cajun seasoning and tomato chunks.
    - Top with the shrimp and then sprinkle with the fontina cheese.
    - Place in the oven and bake at 350 for 15 minutes.
    - During the last 2 minutes, turn on the broiler to high and broil until the cheese is slightly brown and bubbly.
    - Garnish with fresh cilantro.

    Cucumber Roll-Ups

    • 2 ounces goat cheese
    • 2 teaspoons fresh dill, chopped
    • 1/8 teaspoon salt
    • 1 red bell pepper, cut into 12 1-inch-long strips
    • 1 large cucumber, cut into 12 1 1/4-inch ribbons

    In a small bowl, stir together goat cheese, dill, and salt. For each roll-up, place 1/4 teaspoon of the cheese mixture at one end of a cucumber strip, press a pepper slice on top, and roll. Secure the end with a dab of cheese.


    I used mozzarella instead of goat cheese... my son loved it.

    Pizza Spaghetti Bake



    Ingredients
    •8 ounces spaghetti noodles
    •3 eggs
    •¼ cup milk
    •½ cup grated parmesan cheese
    •1/2 teaspoon oregano
    •½ teaspoon crushed garlic
    •2 ½ cups jarred spaghetti sauce
    •3 cups shredded mozzarella
    •3.5 ounce package sliced pepperoni

    Instructions

    1. Preheat oven to 375 degrees.

    2. Cook the spaghetti noodles in salted water according to the package directions. Once cooked, drain well.

    3. In a medium-sized bowl, whisk eggs and milk.

    4. Add the parmesan, oregano and garlic to the egg mixture.

    5. Stir in spaghetti noodles and quickly toss until all ingredients are combined.

    6. Pour noddle mixture into a greased 9×13 pan.

    7. Pour the spaghetti sauce on top of noodles.

    8. Top with half of the pepperoni.

    9. Sprinkle the shredded cheese on top of the pepperoni and top with remaining pepperoni.

    10. Bake for about 25 minutes or until golden brown.

    11. Let the pizza spaghetti cool for five minutes before serving so all the yummy cheesiness doesn't fall apart.


    I am wondering if this could be done in a crockpot ? How to keep from overcooking the pasta ? Any ideas ??

    Zuppa Toscana (better than Olive Garden!)

    1 lb. Italian sausages (use spicy to get that signature Olive Garden flavor)
    4-6 russet potatoes, chopped
    1 onion, chopped
    1/4 c. REAL bacon pieces (optional)
    2 Tbsp minced garlic (about 3-4 cloves)
    32 oz. chicken broth
    1 c. kale or Swiss chard, chopped
    1 c. heavy whipping cream
    2 Tbsp flour


    1. Brown sausage links in a sauté pan.
    2. Cut links in half lengthwise, then cut slices.
    3. Place sausage, chicken broth, garlic, potatoes and onion in slow cooker. Add just enough water to cover the vegetables and meat.
    4. Cook on high 3-4 hours (low 5-6 hours) until potatoes are soft.

    30 minutes before serving:
    5. Mix flour into cream removing lumps.
    6. Add cream, kale, and bacon to the crock pot, stir.
    7. Cook on high 30 minutes or until broth thickens slightly.
    8. Add salt, pepper, and cayenne to taste.

    BEST. SOUP. EVER!!!!

    Directions:

    1. Cook ground turkey in skillet until browned. Drain. Add taco seasoning packet and water. Cook about 5 minutes or until sauce is thickened. Add diced tomatoes. Bring to a boil. Reduce heat. Cover and simmer about 10 minutes stirring occasionally.

    2. Add pinto beans. Cook uncovered another 5 - 10 minutes or until liquid from tomatoes is reduced.

    3. In an ungreased 2-quart casserole dish, place broken tortilla chips or taco shells. Top with beef mixture. Sprinkle with cheese. Microwave about 3 minutes to melt cheese.

    4. Top with lettuce, green onions, and red bell pepper. Serve warm.

    Pumpkin Pie Crunch

    1 can (15oz) solid pack pumpkin
    1can (12oz) evaporated milk
    3 eggs
    1 1/2 cups sugar
    4 tsp. pumpkin pie spice
    1/2 tsp. salt

    1 pkg. yellow cake mix
    1 cup chopped pecans
    1 cup butter, melted (I used stick margarine)

    Preheat oven to 350F. Grease bottom of 9x13 pan(spray w/Pam). Combine the first 6 ingredients in a large bowl-use a whisk. Pour into pan. Sprinkle dry cake mix evenly over pumpkin mixture (Do NOT stir it together). Top with pecans. Drizzle with melted butter or just drop the pats of butter on top).

    Bake at 350F for 50 to 55 minutes or until golden.

    Cool completely. Serve with whipped topping. Refrigerate leftovers.

    You can also cook this outside in a dutch oven with charcoal.

    I did this in a 12" dutch oven and it was fabulous!!! Yum Yum! I lined my dutch oven with easy release foil because I am lazy for cleanup! 6 coals on bottom & -18 on top for same amount of time.

    I keep getting asked over & over again for this recipe. People can't get enough. Fast, easy to make and soooo good!!!! Recipe is hard to find. Share it to your Wall so you'll have it whenever you need it.


    ~~ 7 UP BISCUITS ~~

    INGREDIENTS:
    4 cups Bisquick
    1 cup sour cream
    1 cup 7-up
    1/2 cup melted butter

    DIRECTIONS:
    Mix Bisquick, sour cream and 7 up. Dough will be very soft - don't worry. Knead and fold dough until coated with your baking mix. Pat dough out and cut biscuits using a round biscuit / cookie cutter. Melt butter in bottom of cookie sheet pan or 9x13 casserole dish. Place biscuits on top of melted butter and bake @ 425 degrees for 12-15 minutes or until brown.
