Cinnamon-Brown Sugar Pancake Mix
by Wen Zientek-Sico
These pancakes are bursting with brown sugar and cinnamon. Based on one of my own grandmother's recipes, this mix is full of traditional flavor. The aroma as the pancakes cook is simply incredible, and the pancakes are really quite easy to make from this convenient mix. Makes 1 bag of mix that will make 3 batches of Cinnamon-Brown Sugar Pancakes.

Ingredients
3 cups flour
1/2 cup brown sugar
3 tablespoons baking powder
1 1/2 tablespoons ground cinnamon
1 teaspoon salt

Directions
Sift together the ingredients into a bag or container. Shake well to mix evenly. Seal the bag or container tightly. On a piece of craft paper or recipe card, write out the instructions below. Attach to the bag or container. Store in a cool, dry place.

To make Cinnamon-Brown Sugar Pancakes: Beat one egg in a medium bowl. Add 3/4 cup milk and 3 tablespoons vegetable oil. Mix in 1 1/4 cups Cinnamon-Brown Sugar Pancake Mix until moistened. The batter will still be lumpy; do not overmix. Cook on a hot, lightly greased griddle or in a medium-heavy skillet over medium-high heat.

Makes 8 pancakes.
